🌷Feliz Dia da Liberdade! 💚 The Revolução dos Cravos (Carnation Revolution) was a peaceful military coup that ended dictatorship in Portugal in 1974 and it's a very important day for the country and Portuguese people.

April 25th must be one of the few days of the year that doesn't go by without us taking a moment to celebrate it.

Today I'm using, as always, a meal to keep my roots and family traditions alive from when I was a child and on the same day also celebrated Avô Paulo's birthday. 💙 Eating seafood by the beach and watching fireworks the night before was what it was all about! So I made some Arroz de Marisco with seafood we got this morning from the farmers market while appreciating the beautiful carnations from the garden center just before planting them in our garden. And that's as close to Portugal as it gets. 🇵🇹

Alheira has got a beautiful story of ingenuity and it was the Jewish Community's answer to survival and to the Portuguese love for pork. 🕍

When Inquisition arrived in Portugal in the 15th century, people were forced to convert to Christianity by interrogators appointed to persecute them. They identified Jewish households by the lack of sausages and chorizos hanging to dry outside their houses.✡️ And so Alheira was born, a kosher sausage that Sephardi Jewish communities created to deceive interrogators and survive the Inquisition.

Nowadays Alheira is a very much loved ingredient by the Portuguese so much that it was voted one of the nation's 7 gastronomic wonders. 🌟 It was adapted throughout the centuries and now you can find non kosher versions which include pork, but usually they're made with chicken or game, bread and garlic. 🐔🍞

Portuguese food has got such a rich history and I can't wait to see what story the next ingredient is going to tell us. 📖🇵🇹

I'm so mad about cinnamon that you'll often find me stirring coffee with a cinnamon stick, only so I can eat it after! 😊 (if you never tried this, you must, serious!)

Back in the 15th century when cinnamon was brought to Portugal from Sri Lanka, it was worth more than silver and gold, because it was so hard to get. 🇱🇰 Today we take it for granted and you'll find cinnamon in A LOT of Portuguese desserts, pastries and cakes. 🇵🇹

I wonder if there are other spices and ingredients in the world left to discover, and if so, how are they going to influence cooking and baking in the centuries to come. 🤔 But for now I have cinnamon, and that's really all I need! 💛

Portugal's love for the humble chickpea (grão) is a well kept secret. 🧡 We are crazy about the stuff and eat it in so many different ways: as a side for fish dishes, stews, salads, soups and even sweets!

Our quest to adapt Portuguese dishes to their vegan versions has only just begun, but we can definitely see great things happening on this section of our menu. 🇵🇹🌟
Featured is Tofu com Natas, a plant version of it's fishy cousin Bacalhau com Natas. 🌿

I always thought that some things can't be replaced until, as an experiment, we decided to go vegan for a couple of months. This unleashed our creativity in the kitchen to start experimenting with new flavours and ingredients not usually found in Portuguese cooking. 🧪🔬⚗️👨‍🔬👩🏻‍🔬

Credit where credit is due though, this dish wouldn't exist on the menu without our friend Joana! She showed me and taught me how to make Tofu com Natas years ago, I loved it and never forgot it! 🐞🖤
(Quick Portuguese lesson: if you're wondering why is there a ladybird emoji, wonder no more! Ladybird means Joaninha in Portuguese and it's also a diminutive for the name Joana) 😊

We tend to think that recipes are only special if they're family recipes, but we easily forget how cooking with friends can have such a great impact in the ways we cook, eat and create beautiful food memories.

When husband Petch makes bread, beautiful things happen! Pão com Chouriço, is one of many items in our growing bakery section and it's one of my favourites.

I remember seeing my grandmother and her next door neighbour Nôno making hundreds of Rissóis de Camarão when I was little, specially around Christmas time. They used to get together in the kitchen and talk for hours while rolling pastry and filling it up with prawn volute. 🦐🌊🦐

The smell of prawns travelled throughout the house, making me really hungry, as always. If the chat was good enough and they were distracted I could sneak in and grab one that has just been fried and there was nothing else like it. It was definitely worth the risk of getting caught! 😆

There's nothing worst than a stingy assembly line made rissol, the ones where you find a lonely frozen/precooked sad prawn swimming in an ocean of volute. We only serve what we like to eat, and we like fresh prawns, so that's what you get. In our homemade Rissóis de Camarão you get prawns in every bite, just like the ones I used to cheekily take from Avó Némicas and Nôno's kitchen. 🤭🤫
