Launching our Single Ingredient series with one of spring's most beautiful produce: asparagus.
The idea behind this collection of tasting menus is simple: to showcase a single ingredient at its seasonal peak, through a variety of cooking techniques and combinations.
Later in the summer, tomatoes will take the spotlight, before we conclude with a menu focused on shellfish in the autumn.
