Jacks knocked up a delicious looking Pad Kra Pao for supper only using what she had on hand. Just a couple of clever substitutes for the things that were missing. Wolfed down even by doubting Thomas who apparently dies not like pork!!! Hope she does this for staff lunch soon.

What a pleasure it was to cater for for their 25th Birthday Party. A busy service with little time for pictures but we did manage to capture one if our favourites crispy rice cakes with sashimi tuna. Nothing left at the end and much fun had by all. Just don’t mention the oven, Jacks nearly turned grey in moments! Thank you for the fabulous tuna.

What a week! Jacks and Dolls now lying in darkened rooms with gin drips! Despite this being the only picture we managed to take it sums things up nicely. Anyone for a roast spud? Christmas lunch for 160 near Heathrow. Serious planning and prep really pays off.

It was a miracle that any of these scrumptious canapés made it the event after all the tasting that went on! A new Christmas bite of turkey, pancetta and sage croquettes with cranberry gel and crispy sage. A crunchy shell managing to contain a soft and delicious filling. More please!

Such a cute canapé and so very, very tasty too. Teriyaki salmon tartare (thank you )on crispy rice cakes with wasabi mayonnaise, pickled ginger and sesame seeds. They pack a perfect party punch.

One of our most popular vegetarian canapes. Cheesy polenta cake with tasty caponata and a sprinkling of vegetarian parmesan. A really tasty punch of flavour.

Taking advantage of perfect “pastry” weather in the kitchen and bulk making homemade all butter puff pastry for up coming events including these salmon wellingtons for a dinner party tomorrow. Labour of love but well worth it.
