St. Bride’s Chicken, White Asparagus, Morel,
Lemongrass, Satay Sauce
This season, we celebrate one of Scotland’s finest poultry producers: in Strathaven, where AJ and Robert Morris rear exceptional free-range chickens. Raised for around 140 days, these exceptional free-range birds develop remarkable depth of flavour. We begin by brining and marinating the chicken overnight with koji, spring onion, and ginger before slowly baking and finishing it on the grill.
Alongside, morels are stuffed with satay-spiced chicken leg and cooked in foaming butter, while seasonal white asparagus is paired with a sauce of fermented asparagus juice, cultured cream, and lemongrass.

Following the success of our first-ever wine dinner, we are delighted to welcome the legendary Champagne house on Thursday, 18 June for our next.
Founded in 1818, Billecart-Salmon is one of the most respected independent houses in Champagne, with over two centuries of heritage and seven generations of family ownership. This rare continuity has allowed the house to remain true to its founding vision, preserving its identity in an ever-evolving industry.
From delicate, expressive cuvées to deeper, more complex vintages, each pairing is crafted to elevate both the dish and the wine, creating a seamless dialogue between kitchen and cellar.
Tickets cost £250 and include a special 5-course tasting menu & full wine pairing.

Earlier this week, we spent a day in the picturesque Stonor Valley with the award-winning ahead of our very first wine dinner at Evelyn’s Table later this month.
Hundred Hills has established itself as one of England’s most outstanding producers of sparkling wine. Crafted exclusively from estate-grown fruit and guided by a philosophy of sustainability and minimal intervention, their wines have earned international acclaim and are listed in over 30 of the UK’s most celebrated Michelin-starred restaurants.
On Thursday, 30 April, Hundred Hills join our Head Sommelier, Isabelle Lynch, for a bespoke 5-course tasting menu and full wine pairing, as we explore the stories behind each bottle — from heritage and philosophy to tasting profile and vintage expression.
3 tickets remain for 6pm, and 2 tickets for 8.45pm.

Cornish Red Mullet, Watermelon Radish, Rhubarb & Blood Orange
Caught off the Cornish coast, this red mullet is aged for three days by the sea the sea. It’s then cured and blowtorched to bring out its natural oils. Thinly sliced, we serve the fish with watermelon radish and a seafood nam jim dressing. This punchy dressing typically includes lots of lime juice, fish sauce, Birds Eye chilli, palm sugar and garlic. Our version uses in-season Yorkshire rhubarb for its tartness instead of lime and some confit blood orange for sweetness. Coriander and dill are added just before serving.
