Welcome to our first post of our Friday dish highlight series! Our Shakshuka’s been with us since the beginning of The Good Egg & it fast became much L❤️ved (and award winning👀). A staple dish across the Middle East + North Africa, the shakshuka is a hearty dish of baked eggs in a tomato sauce, peppers + spices. It’s the PERFECT meal for anytime of the day; a proper punch of flavour. We thought you’d appreciate the recipe, so you can make it even when you can’t get yourself to The Egg! 🫶🏻✨

-2 red peppers 🫑
-1 white onion 🧅
-2 garlic cloves, minced 🧄
-1/2 tsp of ground cumin ✨
-2 to 3 springs of coriander & parsley 🌱
-1 bay leaf 🍃
-2 fresh thyme sprigs 🙌🏻
-1 tbsp of sugar soft dark brown 🍬
-1 tsp tomato paste 🍅
-1 cube veg stock 🫕
-1/2 tsp of smoked sweet paprika 🌶️
-salt to taste 🧂
-1 tin of chopped tomatoes and 1 of plum tomatoes 🥫
-1tsp of cayenne pepper
-1 tbsp of harissa paste
-4 eggs 🥚
