Happy Pancake Day!
I love pancakes no matter the day, so I thought I would share my recipe for some super fluffy American style pancakes with you!
Ingredients
• 270g plain flour
• 2 tsp baking powder
• 1 tsp salt
• 4 tbsp caster sugar
• 260ml buttermilk
• 2 large eggs, lightly beaten
• 4 tbsp melted butter, slightly cooled, plus extra for cooking
If you don’t have butter milk, just add a squeeze of lemon juice to your fresh milk.
Method
Sift the flour, baking powder, salt and sugar into a bowl. Whisk the buttermilk, egg and melted butter together, then pour into the dry ingredients and mix until smooth. Let the batter rest for a few minutes.
Heat a non-stick pan over medium heat with a k**b of butter. Spoon in a ladle of batter. Cook until bubbles form on top and the edges look set, about 3 minutes. Flip and cook for another 2 minutes until golden and fluffy.
Repeat with the remaining batter. Best eaten straight from the pan with plenty of maple syrup and extra butter.

We’re absolutely thrilled to be hosting our first Supper Club of the year this Friday 30th January 2026, kicking off at 7.30pm at .dining
Natalie will be cooking up a menu inspired by what’s in season, with a few of her personal favourites thrown in for good measure.
Her cooking celebrates the seasons with a leaning towards sun-drenched Mediterranean flavours and the odd playful nod to her South African roots. Honest, ingredient-led and wonderfully warm, it’s the sort of food that makes you want to linger at the table just a bit longer.

To get to Francis Road in London, you can take the Overground to Leytonstone High Road Station and then walk for about 10 minutes. Alternatively, you can take bus routes 257 or W14 and get off at the Francis Road bus stop.
If you are driving, there is limited street parking available on Francis Road and nearby streets. It is recommended to check for parking restrictions before leaving your car.
