We went to choose your steak. 🥩
We were lucky enough to spend the day at HG Walter , one of London’s most respected independent butchers, choosing the beef for our Steak Night on 24 September.
What really stood out to us was how much importance they place on provenance — working with small farms, native breeds and farmers they know and trust, with animal welfare and traceability at the heart of their sourcing.
We got to see the beef, talk cuts, talk ageing and, most importantly, choose exactly what we wanted to bring back to Wanstead.
HG Walter’s beef is dry-aged for at least 28 days, concentrating those deep, rich flavours and giving the meat that tenderness we all want from a great steak.
So this 24 September, we’re bringing some of what we found back to the pub.
