Last week, our team pulled on their wellies and headed across the Irish Sea to visit our friends at Carlingford 🦪
We’ve been working with Carlingford Oysters for years, and their oysters remain a firm favourite across our Wright Brothers restaurants and wholesale. Grown in the pristine waters of Carlingford Lough, the tide providing the essential nutrients while the freshwater surrounding the mountains contributes to their distinct flavour - rich, sweet, and slightly nutty.

Available at all three of our London restaurants, or order online via the link in bio and have them delivered straight to your door.

The same way wine has terroir, oysters have merroir - the sea shapes the oyster's taste and their shells.
An oyster's shell tells a story. Their shells can indicate species, growth, farming method, and environment, all of which influence flavour, texture, and form.
Next time you’re enjoying Wright Brothers oysters, pop your empty shells down shell-side up, a little sign you’re finished but also a chance to admire those beautiful shells!

From head to toe (or tail in this case) nothing goes to waste.
A few weeks ago, you met Head Chef José’s hake head dish. Now, he’s back with the other end of the fish, his hake tail dish.
Served with homemade gazpacho, San Marzano tomatoes, pea shoots, radish, pickled red onion, and broad beans, it’s a fresh, vibrant dish made for warmer days. Find it on the specials board at Borough Market!
Hake proudly supplied by our very own .

“Some might argue that the oyster is the perfect food” - Anthony Bourdain
We couldn’t agree more.
Anthony Bourdain was a fan of enjoying oysters at Wright Brothers Borough Market. To celebrate the upcoming release of TONY, the new film exploring his origin story, we hosted a special Oyster Masterclass at our Borough Market restaurant, followed by a feast we think Bourdain himself would have approved of.
If the film leaves you craving oysters, you know where to find us.
