Fierce Filipinas on International Women’s Day 2026

“…choosing the words that echoed, that reverberated…and then it was making the readers hear the silence between the echoes, and themselves load them with memory, sensation, and finally meaning.” An extract from an essay collection on Filipino cuisine, by Alicia Dorotea Gamboa Fernandez, better known as Doreen Fernandez. She was conveying the sensory description of food onto pages. Doreen Fernandez, was a renowned writer, teacher, cultural historian, food critic and scholar who wrote extensively about Filipino cuisine and theatre, born on 28th October 1934.

Fernandez spearheaded and revolutionised the perception of Filipino cuisine through literature. In her essays, she explored and expressed the truth, that Pinoy food is much more than home cooking and carinderia food. Filipino food deserves the term ‘cuisine’. Her writings are documented in particular, in the books, ‘Palayok’ (cooking pot), ‘Sarap’ (delicious), and ‘Tikim’ (taste).

Fernandez asked in ‘Tikim’, “How many words are there for ‘delicious’?” Therefore, how many delicious dishes are there in Filipino cuisine?
