Violet icing, Fragola grapes, black figs, burgundy dahlias and red velvet roses. You already know this, it’s why you’re here, but the care and detail in our cakes is a process and labour brought out of our passion for nature and desire to capture its beauty. I’ve been baking since I was a child and practicing and perfecting and making so many mistakes along the way too. Now I teach and guide the next generation of pastry chefs who come through my doors here. As we grow, one of my greatest accomplishments and something that brings me deep satisfaction is nurturing talent. Watching my team bring my vision to life and carefully choose and place and learn the art of loosening up, is life affirming. You buy a cake from us and you buy a living thing, a cake full of not just great flavour and texture but of creative energy and of talented chefs giving their all. Thank you for choosing us 🩷

These incredible blue madeleines are coloured with all-natural spirulina, which creates this stunning baby blue. Alongside them, our California sheet cake brings all the almondy amazingness. Both are topped with beautiful edible silver leaf and honestly look too good to eat (but please do, they are delish).

Finger lime cupcakes in the house! This caviar-like lime is soooooo delicious. We love it paired with chocolate actually. It’s delicate and beautiful and delicious. The texture is so special x We have these beauties and the last of the roasted plum cupcakes and berry cupcakes before autumn fully takes hold.

The last days of Summer pudding cupcakes this weekend! If you live in Victoria Park and could hear the festival last night like us, you feel the vibes too. Hope everyone had fun and danced their hearts out 🩷 We have Summer pudding cupcakes made with black currants, raspberries, red currants, strawberries and vanilla beans, simmered together and slightly reduced before running through the mouli and folding into buttercream. These will sooth your heads today xx

Belmond asked me to write a recipe for the Madeira book published by Apartamento so it had to be pineapple upside down cake but with Madeira instead of rum. Sticky, gooey, delicious and easy. Violet Cakes by Claire Ptak made these gorgeous large versions for the book launch at DOVER STREET MARKET last month
And of course I had to make them when we filmed in Madeira back in April. I made them on one of the terraces at Reid's Palace overlooking the Atlantic. Right Where Winston Churchill holidayed and painted plein air. Take me back.

Northern California, I see you, and I love you. Thank you for the best summer of my life. My community is still the best place on earth. They raised us. Me and Fran, The bay, supporting restaurants and cafes, sitting on porches, seeing family, leaving screens behind, The Hoffman Process, Gilbert Pilgram , hiking, baking with Granny Lizzie, shell 2, CARE OF CHAN , homies, mom and dad, where I was born, and my daughter sailing.

Summer pudding cupcakes: a puree made with black currants, red currants, raspberries and strawberries and lemon verbena this time. Sometimes we use geranium and sometimes orange or lemon blossom. A favourite colour and a very favourite flavour. Also some beautiful dahlias and cosmos from our flower growers. July is purples and reds ###
