salmon crispy rice salad🍣🥗 inspired by our restaurant favourite, ‘salmon on a bed’🫶 full recipe below
ingredients
🍣 1 filet of salmon
🥄 1 sachet miso’easy
🥄 1 tsp sugar
🥄 1 tsp sesame oil
🍚 250g microwave sushi rice
🥄 2 tbsp itsu teriyaki sauce
🥄 1 tbsp itsu crispy chilli oil [or more if you like it spicy]
🥄 1 tbsp soy sauce
🥒 1 small cucumber
🫑 1 red bell pepper
🫛 100g edamame beans
🌱 2 stalks of spring onion or 1 baby leek
🫚 optional- 1/2 thumb of minced ginger
☘️ optional- coriander to top
dressing recipe:
🥄 2 tbsp tahini
🥄 2 tbsp kewpie mayo
🥄 1 tbsp soy sauce
🥄 1 sachet miso easy
🥄 2 tbsp toasted sesame seeds
🥄 1 tbsp honey/maple syrup
🥄 water to thin out to desired consistency
coat the salmon in miso, sugar, and a touch of sesame oil. grill in the oven for 10 minutes at 200c. let it rest and gently flake it apart.
mix the microwave rice with chilli oil and seasoning. spread onto a lined tray and bake on the grill setting for 15-20 minutes or until it gets crispy. mix it halfway through cooking.
chop the veg into small bite sized pieces and assemble as your base. add the salmon, crispy rice, and finally drizzle over the dressing. mix and enjoy!

🍚 rice paper sheets
🥬 iceberg lettuce
🥕crunchy veg like carrot, cabbage, cucumber
🥑 half an avocado
🌱fresh chives or coriander
🐟 a tin of tuna or any other protein
dipping sauce:
🥄1 heaped tbsp tahini
🥄 1/4 cup kewpie mayo
🥄 1 tbsp soy sauce
🥄 1 sachet miso easy
🥄 2 tbsp toasted sesame seeds
🥄 1 tbsp honey/maple syrup
🥄 water to thin out to desired consistency

10-minute rice paper cheung fun hack🍤 full recipe below
ingredients [makes 3]:
🍤 80g raw peeled prawns or shrimp
🍚 6 pcs of rice paper
🌱 3 stalks of chopped spring onion
🥄 1 tsp sesame oil
🌶️ itsu crispy chilli oil
🥄 top with soy sauce and black vinegar
briefly dip the rice paper in cold water and lay it onto a board. place 4 prawns in a line with a sprinkling of chopped spring onion.
tuck the top and bottom of the rice paper in to seal in the prawns, then gently roll the rice paper like you would a burrito. repeat with a second layer of rice paper to secure.
rub some sesame oil onto a heat-proof plate and place the cheung fun on. steam for 7-10 minutes depending on how large the prawns are.
top with crispy chilli oil, soy sauce, and a touch of black vinegar. enjoy!

dumpling filling mix:
🥩200g minced beef
🌱4 green onion [finely chopped]
🥬 1/2 cup cabbage or pak choy [finely chopped]
🫚 thumb of grated ginger
🧄 cloves of grated garlic
🥄 1 tbsp soy sauce
🥄 1 tbsp mirin/shaoxing rice wine (optional)
🥄 1 tbsp itsu teriyaki sauce
🥄 1 tsp sesame oil
🥄 pinch of pepper
ingredients:
🥟 frozen dumpling wrappers
🥕 shredded veg [carrot, cucumber and cabbage work well]
☘️ top with coriander or spring onion
🌶️ itsu crispy chilli oil
start by finely chopping cabbage and salting it to release moisture. combine the dumpling filling ingredients (including the strained cabbage) and stir until combined.
spoon 1.5 tbsp of the mixture onto defrosted dumpling wrappers, and firmly spread up to the perimeter of the dough.
grill on medium high heat for 5-7 minutes or until it develops a brown crust, pressing firmly like a smash burger patty. flip and finish on other side for 2 minutes.
serve with fresh shredded veg, and extra drizzle of teriyaki, and crispy chilli oil.

To get to Euston Piazza in London, you can take the tube to Euston station using the Northern or Victoria lines. From there, it's a short walk to the Piazza. Alternatively, you can use any of the numerous bus routes that run along Euston Road.
If you're driving and need to park, there are a number of car parks nearby including the NCP car park on Melton Street and another on Judd Street. Please note that parking in this area can be expensive.
Once you arrive at Euston Piazza, you'll find two restaurants: one serving sushi and another serving health food. Both are easily accessible from the piazza itself.
