Your favourite tea cocktail competition is back! 🍸
Each autumn, we dust off our cocktail shakers for The Proper Shake Up - a chance for bartenders and brewers from our partner restaurants, bars, roasters and coffee shops to put their own spin on tea-inspired cocktails, competing for top prizes in front of our judges, as well as a People’s Choice Award decided by the audience.

The question we get asked most:
“Can we batch matcha ahead of service?” is one of the most common questions we hear from high volume cafes serving matcha at scale. The short answer: yes, but only with careful handling.
The gold standard:
For any café serving matcha, whisking to order remains our top recommendation and the gold standard for matcha service. It protects the flavour and vivid green colour customers expect, and the visible ritual of whisking matcha adds what we like to call ‘tea theatre’, improving customer perception of quality.
When batching makes sense:
A fresh matcha concentrate batched in-house can speed up service, improve consistency, and ease pressure during busy periods, without relying on ready-made matcha concentrates which usually contain more additives and stabilisers than actual matcha.
The ratio we recommend:
Our recommended ratio for batching matcha is 3g matcha to 30ml water at 80°C, dosed at 30ml matcha concentrate per drink. Sieving and shaking properly are essential to ensuring a top quality end result.
The main watch-outs:
→ Colour: matcha fades when exposed to heat / oxygen.
→ Flavour: matcha’s fresh grassy notes become more bitter, stale or muted over time.
→ Separation: the powder can settle, so the concentrate needs shaking before use.
→ Storage: Must stay cold and be dated
→ Customer perception: customers value a drink more when they can see it being prepared fresh.
To keep your matcha concentrate fresh, keep it cold (ideally in the fridge), use it the same day, and shake before every single serve.

Wimbledon is in full swing. If you couldn’t make it to Centre Court this year, our twist on a courtside classic is the next best thing: Rooibos Punch 🎾
Ingredients
→ 1 heaped tsp Good & Proper Rooibos (brew for 5 mins)
→ 20ml simple sugar syrup
→ 20ml lemon juice
→ 1 strawberry
→ 1 cucumber slice
→ Ice
Sweet strawberries, crisp cucumber and the mellow vanilla notes of Rooibos come together in a drink that’s nostalgic, refreshing and made for summer 🍓🥒
