If there’s one dish that perfectly bridges the gap between classical Europe and the Middle East, it has to be our Sirloin Tataki. We take a premium cut of sirloin, give it a quick sear to keep the center tender and pink, and serve it with our own twist on a classic Ajo Blanco. While the name literally means "white garlic" in Spanish, this traditional Andalusian almond and bread-based soup actually predates the famous tomato gazpacho.

In our version, the Ajo Blanco is reimagined as a rich, velvety cream infused with pear and cherry vinegar, striking a beautiful balance between fruity sweetness and a bright, subtle acidity. To round out the plate, we’ve added cherry tomatoes, pickled radish, and seasonal green almonds for a refreshing crunch. It’s a dish where the soulful depth of Southern Spain meets our signature Mediterranean freshness, creating a bite that is as complex as it is delicious.

Farm to Table: How We Source Our Meat

At Claro, we love to cook with farmers in mind, starting with the ingredient and building real relationships with the people who raise it.

Over the past few months, we headed west to Berkshire - a rural, green region with serious grazing fields and outstanding produce. That’s where the meats now leading our dinner menu come from, and we treat them the way we know best: Mediterranean, well-seasoned, but never too "heavy".

To start, you’ll find a venison tartare served with potato pavé in a cacio e pepe style - a uniquely creative dish. Further on, there’s osso buco from Bower Farm with pappardelle, beef jus and parmesan - an Italian-Mediterranean plate with a twist.

For those who love meat off the grill, there’s a charcoal-grilled steak from Bower Farm served with bone marrow - as farm to table as it gets. And if you feel like sharing, the lamb platter for two comes with tzatziki, matbucha, pickled vegetables and warm pitas, perfect for the table.

This is a menu built from the ground up: from the farm in Berkshire, through the butcher and the farmer, all the way to the plate. Local ingredients given a clear Mediterranean treatment, just the way we like it.

How did a prawn end up inside a falafel?

One of our favourite starters is the prawn falafel, something you won't find anywhere else. We wanted an opening dish that works instantly - something that hits different, just a little unexpected, but with a texture everyone loves. Falafel felt like the obvious choice. For us it's the ultimate starter, but the question was how to take something so familiar and give it a small twist without losing its soul.

The prawn came into the picture almost by accident. One week we ate at an Italian restaurant and a Spanish one, and in both places the evening started with the same basic idea - a fried ball. Arancini in Italy, croquettes in Spain. Simple food, done well, the kind that makes everyone happy.

That’s when it clicked. If Italian or Spanish fried ball is built around rice or potato, ours will be falafel. From there, the question became how to add another layer without overpowering it: how to keep the flavour and texture of falafel, while folding shrimp into the bite so it feels integral, not decorative.

After quite a few trials, it came together. The texture, the crunch, the juiciness. A dish you eat without overthinking it, and that is exactly the point. Falafel that feels completely natural to us at Claro, with a small twist born from the city we cook in.
