Our March subscription coffee.

A natural Sudan Rume from Las Margaritas, produced by Café Granja La Esperanza in the Cauca Valley of Colombia.

Sudan Rume is a unique varietal — expressive, complex, aromatic, and sometimes almost herbal.

Grown at 1,700 metres in the cloud-covered mountains of Las Margaritas, only fully ripe cherries are selected. After harvesting, the coffee was held in silo for 48 hours before undergoing a traditional natural process, then solar dried for 28 days and rested for three months to stabilise. The process contributes to the sweetness and intensty of this lot.

This is the third year we’ve released this coffee - and each time, it continues to surprise us with its profile. Expect flavour notes of stem ginger, blueberry and cardamom,.

Consistency.

After roasting, our House Espresso passes through optical colour sorting. Each bean is individually scanned, and those outside our parameters are ejected.

By removing inconsistencies, we’re able to dial in more accurately time and time again - reducing bitterness and increasing clarity and uniformity from shot to shot.

This level of attention to detail defines our House Espresso.

Available via subscription: a rotating 1kg espresso, selected seasonally and designed to live in your hopper - at home or in service.
