On Tuesday, 16th June, Pinna is coming to Belvedere for our second Four Hands Dinner.
“It’s a dish I chose for its purity and precision,” says , Head Chef of Pinna, ahead of the collaboration.
This scallop tartare celebrates freshness at its core, using scallops sourced from Orkney for their natural sweetness and delicate texture. That sweetness is balanced with the crunch and minerality of celery, while caviar brings a deep marine intensity that anchors the dish.
A light dressing of citrus and chives lifts everything, adding brightness and a clean finish that keeps the focus on the quality of the product.

Introducing Lello Favuzzi
On June 16th, joins for a special Four Hands Sardinian dinner experience in Holland Park.
The connection is truly special: Achille and Lello are both from Sardinia, representing the south and north of the island, and trained at the same culinary school.
Born in Sassari, Sardinia, Lello trained at catering college before beginning his career at Hotel Cervo. He moved to London in 2003 and went on to work in some of the city’s most recognised kitchens, including Alan Yau’s Anda, Franco’s on Jermyn Street, The Wolseley, l’Anima and Mortimer House, later running six restaurants as Executive Chef.
Since 2023, Lello has led the team at Belvedere in Holland Park.
