This heatwave has got us pining for the rolling hills of Wiltshire and Guy Ritchie’s private lakeside idyll.
As well as a weekly-changing line-up of ludicrously talented guest chefs (coming up we have Alex Claridge from Michelin-starred The Wilderness, Birmingham, and Edinburgh superstar, Roberta Hall McCarron), our summer residency at Ashcombe Estate also features long, lazy afternoons of leisurely outdoor pursuits that are made for glorious summer days like these.
Cool down with a spot of wild swimming in New Lake, also home to the Ritchie family sauna, or stretch out under a chestnut tree with a good book and glass of Eau de Provence rosé, before dining al fresco at Saturday evening’s WildKitchen experience.
This weekend we have special double-header as Chantelle Nicholson and Sabrina Gidda join us for a four-hands dinner by the lake. Only a few spaces remain for the rest of the season so hit link in our bio if you’d like to find out more.

With a maximalist style that refuses to be labelled, Spectre is the full-throated, at times off-the-wall, fine dining experience from Sebastiano Campanelli, a virtuoso chef who cut his teeth at Maaemo*** and Noma*** before rising through the ranks at The Man Behind The Curtain* (Leeds), Mana* (Manchester) and Savage* (Oslo).
Now riding solo, restrained only by the limits of his imagination, Sebastiano is ripping up the rule book with flavour-forward creations like ‘Cod, Aji Amarillo, Fennel Lyonnaise, Coriander’; ‘Tuna Crudo, Watermelon, Nasturtium, Yellow Chilli’; and ‘Koji Cured Duck, Black Garlic, Sour Cherries, Sichuan Pepper Corn’. This week we welcome the culinary mastermind behind Mogano as Matteo Faeza joins us with his delicate and technically brilliant celebration of Italian fine-dining.
Nestled in the hills just north of Rome, Mogano is Matteo’s culinary playground that draws fine dining lovers from across the width and breadth of Italy to witness him deliver gastronomic theatre to just five softly-lit tables at a time.
For his week with us, Matteo is taking creative inspiration from his time at Boragó (No. 23 World’s 50Best) and Michelin-starred Nerua, to deliver a tasting menu that encapsulates everything to love about his micro-restaurant. He takes us through the menu he’s cooking for us in its entirety, a snapshot of the kind of culinary magic that is normally reserved for the lucky few to land at his Formello outpost.

Reflecting on another 10/10 weekend at Ashcombe Estate with Alchemilla’s, Alex Bond. The weather might not have been on our side but there’s never a dull moment on Guy Ritchie’s rolling Wiltshire estate.
Our summer series at Ashcombe Estate is now in full swing, we’ve already welcomed world-class guest chefs like Luke Selby, Rob Roy Cameron and Pablo Díaz to cook with us lakeside on the WildKitchen and with heavy-hitters like Jake Finn, Alex Claridge and Roberta Hall-McCarron alongside many more all still to come, things are really heating up.
This year’s series is in collaboration with EAU DE PROVENCE, our partners and co-conspirators in making this luxury weekend getaway “The UK’s most delicious weekend away” 𝘊𝘰𝘯𝘥é 𝘕𝘢𝘴𝘵 𝘛𝘳𝘢𝘷𝘦𝘭𝘭𝘦𝘳.

Leaning into his deep bag of Cantonese tricks, John blends regional Chinese influences with contemporary technique and playful contrasts, delivering more of the flavours that made his critically-acclaimed Sydney restaurant MASTER such a nailed-on hit and explains why his current reign at West London’s, Caia, enjoys an almost cult-like status.
On the menu? Think knockouts like ‘Lamb Xiang Bing’, ‘Steamed Clams with Glass Noodles and XO Sauce’, ‘Dragon Phoenix Soup’ and ‘Peking Style Pork Jowl, Pancakes and Condiments’, this is John cooking in full creative flight.

Our first {PAIRED} of the year is nearly here, so we caught up with chef John Javier and Kai Campos of Mount Kimbie to talk creative process, collaboration and what to expect.
The duo land at Carousel on the 27th June for a masterclass in creative artistry as John delivers one of the menus of the year alongside Kai’s finely tuned selections.
