I remember over 20 years ago, when Chinese supermarkets were giving Lion's Mane mushrooms for free at the till, because no one would buy them. Now they're bloody expensive!
Anyway I got them for free, kindly donated by . I fried them like steak bites, ready for a posh fried rice. Bit of light soy sauce is all it takes . They kinda taste like steak with a bit of imagination.

Nasi Goreng (fried rice) + Thai red curry

3 main ingredients: Gula Malaka (Malaysian palm sugar), Kecap Manis (sweet soy sauce) and Chinese 5 spices. Fry onion and garlic in oil. Add seitan chunks, brown it a bit, add Gula Malaka, let it melt. Add kecap Manis and Chinese 5 spices. Now you have a glaze that will soon wrap around the seitan. Fry it until it is deeply caramelised. Adjust seasoning with plain salt if needed.
