🥘 Learning to Dance in the Rain ✨
They say that life isn’t about waiting for the storm to pass, but learning how to dance in the rain. 🌧️💃
For us, Ian’s Pan Dance is that dance. After losing our beautiful boy, Ian, to cancer, we decided the best way to honor his light was to share the joy and flavors he loved with the world.
Every sizzle of the pan, every grain of rice, and every smile shared at our stall is for him.
When you visit us in the heart of London, you’re not just grabbing a meal; you’re stepping into a world of pure imagination—a world Ian helped us build.
What we’re cooking with love today:
The Big Pans:
Our signature Meat, Shellfish, and Vegan paellas, all stirred with heart. 🥘
The Golden Touch: Our creamy Saffron Aioli (Ian would have loved the color!). 🧄
The Comfort: Crispy Patatas Bravas with our secret homemade brava sauce. 🔥
The Sweetest Memory: Our scorched, gooey Basque Cheesecake. A little slice of heaven. 🍰

What a journey ❤️
This business was born from love and inspired by a dream.
Two years ago, Ian's Pan Dance started as a mission to keep our son Ian's spirit alive and fulfill his vision of sharing authentic Spanish food.
From our first market stall, serving the same beloved paella and tapas, every pan, every sizzle, and every bite is a tribute to him.
Thank you to everyone who has supported us and become part of Ian’s legacy. We’re just getting started!

25 November…
A date that once opened the door to the purest joy I’ve ever known.
The day the world gave me Ian —
a boy made of light, courage, laughter, and a kind of goodness
that still feels impossible to describe.
Tomorrow he would have turned 13.
A teenager.
A new chapter we will never get to live with him…
and that truth breaks something inside us that no time can ever fully repair.
What used to be balloons and excitement
is now silence filled with memories.
What used to be a celebration
is now a tenderness wrapped in pain.
What used to be the happiest day of our lives
is now one of the hardest to survive.
But still —
we will make him a tart,
light the candles Nathan chose,
and sing “Cumpleaños feliz” into the quiet.
We will blow the candles for him,
because love doesn’t vanish,
because he is still ours,
because he still deserves a birthday song.
Every photo, every dish we cook,
every moment we keep going
is stitched with his presence.
He is not here —
but he is everywhere in everything we do.
Happy 13th birthday, my angel.
We miss you in a way words will never hold.
And we love you in a way that will never end.
