Congratulations to J and K, married at Kew Gardens two weeks ago! They celebrated afterwards at The Botanist on the Green, Kew with this cake. This one was vanilla and raspberry, lemon, and battenberg tiers, being nibbled by their little dog!

If you would like to add your dog to your cake, I'll set it up so it looks like he's had his nose in the icing!

This one, for G and C at The Charterhouse, was all fruit cake, baked by G's mum, and covered with marzipan and royal icing by me.

Wedding cakes in the UK used to be always fruit cake. They were covered with marzipan and royal icing, which needs to be applied in several layers over a couple of weeks. When sugarpaste became popular in the 80s and 90s, it meant cakes could be covered with icing in a day - meaning sponge cakes, which have a shorter shelf life than fruit cake, could be used....opening up lots of interesting flavour options for your wedding cake!

The great thing about fruit cake and royal icing is neither will melt if it's hot. So perhaps we'll see a return to this style in future summers! (I am so happy it's cooling down here!) I loved making this one so very happy for more like this!
