SMOKEY CHALKSTREAM TROUT.

So the final dish is the cured ChalkStream® trout with fermented berries (strawberries and gooseberries here), basil and a kohlrabi/white wine sauce that has been laced with our smoked trout tare.

CHALKSTREAM TROUT 🐟

We've always loved working with ChalkStream® via The Sea, The Sea and this prep has been no exception.

Aged 5 days to pull put excess moisture.
Cure 2 hours with a cardamom and black pepper cure.
Carcasses and trim are all roasted heavily them smoked to make an intensely smokey Trout Tare.

Do you watch MasterChef? If so, you probably saw South London local Kristen Dodd secure a prestigious runner-up place.

Our Chef Remi is teaming up with Kristen to offer two limited capacity supperclub dates in September. The food menu will be priced at £80 per head with a special pairing optional on the night as well as our regular drinks menu.

Full bit on this rum baba...

Tool us a little bit of time to get this one just right (thanks to all for the feedback after our preview night a month or so ago).

Basically, we make this soy milk bun and fold through this coconut-praline and let it prove over night. The dough is tricky to work with but it's completely worth the final dough which is airy and light....perfect for soaking. The soak itself is done to order (rather than overnight which gave us a bread that was just a bit "too wet") by dropping into a syrup. The syrup itself is made by cooking off the Three Counties Spirits Co for a lovely caramel and pineapple syrup with just the right amount of edge.

Chef Zac has been on a tear recently with our "free-from" ice-creams and so we top it all off with a pina colada ice-cream made from the pineapple juice and coconut milk. Freshness comes from a pineapple, mint and lime salsa and a few leaves of coriander. The whole dish is finished with a sprinkling of Tajín Tajin UK for a salty, spicy, tangy bite.

MORTELLITO CALA NIURU ROSSO.

A bit more info on this one following up the other day. Mainly made from Frappato grapes it's a natural and organic red. Loads of ripe strawberry and cherry here and great rhubarb-esque we serve this one chilled.

If you aren't into natural wines, this is a great entry level chilled red.

Tooting High Street is located in South London. If you are traveling by public transport, the closest tube station is Tooting Broadway on the Northern Line. From there, you can take bus numbers 44, 77 or 270 and get off at the Tooting High Street stop. Alternatively, you can take a train to Tooting Rail Station and walk for approximately 10 minutes to reach Tooting High Street.

If you prefer to drive and park your own car, there are some parking options available around Tooting High Street. There are a few car parks nearby including Tooting Market Car Park and Springfield Hospital Car Park. Additionally, there is some street parking available with pay-and-display meters.
