Pasta special of the week:
CARAMELLE w/ goat’s cheese and lemon.
Caramelle means CANDY in Italian and I wanted to recreate a more Candy pattern to the usual yellow dough so I added a bit of beetroot dough to make irregular stripes. Lots of fun but they are delicious too.

Spinach Ravioli w/ caramelized onion and parmesan.
Spring is just around the corner and weather seems saying that too so spring means GREEN a lot of green.
Egg dough with the addition of some beautiful spinach purée to give that beautiful emerald color and a bit of spinach taste to the dough too.
Filled with beautiful caramelized Italian onion and 24months Parmesan.
To eat in or to take home and cook whenever you prefer. 🍃🌱

Beautiful sun outside so that means fresh pasta with homemade pesto….spring is coming 😍☘️🍀🌿
📸Fagottini di ricotta w/ basil pesto.
Here’s my recipe for a beautiful basil pesto:
50gr parmigiano reggiano
50gr pecorino romano
50gr pine nuts
1/2 garlic clove
125gr fresh basil
Pinch of rock salt
250ml EVO oil

Work the cheeses, garlic and pine nuts in a food processor until a coarse paste form. Add the basil and the salt and mix until you have a green paste, then start adding the oil through the food processor hole while mixing.
Ready in less than a minute.
