a new life for last spring’s artichokes. in collaboration with , we’ve made a new amaro turning our trim into a smoky, bittersweet amaro. each week through artichoke season, the team set aside their trimmings, to then gently char and steep them in grain spirit to build depth. before finishing with a rich muscovado molasses for a toffee-like sweetness. earthy, nutty, and herbaceous. proof that nothing good should ever go to waste.
