One of the simplest dishes in Spanish cooking and one of the most delicious. Juicy, ripe tomatoes, good olive oil, and warm, toasted bread come together to create the perfect bite. Simple ingredients, treated with care, are often all you need.

Here's Ricardo's Pan Con Tomate recipe:

Ingredients
• 4 ripe vine tomatoes
• 1 garlic clove
• 50ml extra virgin olive oil
• 5g Maldon salt
• 1g black pepper
• 4 slices sourdough bread

Method
Grate the tomatoes into a bowl, discarding the skins.
Allow the grated tomatoes to sit in a fine sieve for 5-10 minutes, draining off any excess water.
Finely grate the garlic into the tomatoes.
Add the extra-virgin olive oil, Maldon salt, and black pepper.
Mix well until combined.
Toast the sourdough until golden and crisp.
Spoon a generous amount of the tomato mixture onto the warm toast.
Finish with a drizzle of extra virgin olive oil.
A handful of quality ingredients, a little patience, and you've got a classic Spanish staple that's perfect any time of day.

One of the tastiest condiments in our kitchens and surprisingly simple to make at home. Creamy, garlicky and balanced with a touch of Moscatel vinegar, it's the perfect companion for everything from croquetas to grilled meats.

Here's Ricardo's garlic aoili recipe:

Ingredients • 1 egg
• 2 garlic cloves
• 1½ tbsp Moscatel vinegar
• Juice of ¼ lemon
• Pinch of salt
• 250ml rapeseed or sunflower oil
• Cold water (if needed)

Method
Add the egg, garlic, Moscatel vinegar, lemon juice and salt to a blender.
Blend for 20-30 seconds until smooth.
With the blender running, slowly pour in the oil until the aioli thickens and becomes smooth and creamy.

If it's too thick, add a splash of cold water and blend again.
Taste and adjust with a little more salt, lemon juice or vinegar if needed.

Simple ingredients, a little patience, and you've got a kitchen staple worthy of any tapas table.
