Today we had some wonderful visitors from Camberwell Food Walks at Nandine to try some of the delicious dishes made by our very own head chef Pary Baban and to learn a bit about the restaurant and Pary’s journey.
Pary Baban foraged some ingredients for the dishes and spoke about the importance of foraging culture in Kurdish Cuisine. Many of the dishes featured fresh, foraged ingredients like Kardû (Cured Lord and Ladies), Wild cured Chives, and Zhaji (yoghurt-based matured cheese).
Dishes:
• Spring Onion Kalana topped with brown butter honey (bottom left)
• Wild Chive Kalana cooked with Zhaji, chives and brown butter honey (top left)
• Xayar û Mast - Yoghurt, Cucumber, Apple, Dill and Qazwan Oil (centre)
• Kardûi Sür Krawa - Stir Fried Egg with Kardû (top right)
• Aubergine Strip Salad (bottom right)
A big thank you to Radha Burgess and Susie Giles for showcasing the diverse food we have here in Camberwell 🌱
