Close your eyes. Atlantic wind, salt on your lips, a glass in your hand.
That is Txakoli Bidaia Blanco. A wine that carries the cold green coast of the Basque Country in every mouthful. The faint prickle of natural bubbles. The squeeze of lemon. That clean stony finish that tastes like sea spray off the rocks.
Now bring it down to earth with a Gilda. The give of the anchovy. The snap of the guindilla. The deep briny olive. Salt against salt, acid against fat, heat against fruit.
It is a small moment that feels much bigger than it should.

Huevo frito con jamón Ibérico y patatas fritas. A perfectly fried egg in olive oil, edges crispy and golden, yolk intact and waiting for you. Alongside it, hand-carved Jamón Ibérico from acorn-fed Iberian pigs raised in southern Spain, and proper fried potatoes that earn their place on the plate.
It is one of the most traditional combinations in Spanish cooking and one of the most quietly spectacular things you will eat in London this year.

This is what happens to our jamón offcuts. Nothing gets wasted at Bar Tozino. Every trim from the leg, every beautifully fatty, salty, nutty piece that falls during carving, it goes straight to Chef Daniel. He builds a bechamel from scratch. Takes his time. Folds the jamón through. Lets it chill, shapes each one by hand, crumbs them, fries them to order. It is not a fast process. It is not meant to be. And every week, without fail, they sell out. Chusé started calling them the best in London a while back. We have stopped being surprised when first-timers walk back in the following weekend specifically for these. Torreznos de Soria. 🐷
If you have never had a proper torrezno, this is your moment. Cured pork belly from Soria, fried low and slow until the outside shatters like crackling and the inside stays yielding and rich. Laid on bread. Topped with a pickled guindilla for that sharp, vinegary lift that makes the whole thing sing.
This is not bar snack food. This is centuries of Castilian tradition on a plate.

We are kicking off our Castilla y León Gastroweek in partnership with our brilliant friends at , and we are starting exactly where we should. Bold, honest, unapologetic.
Morcilla con Pimientos.
This is the food of the Castilian meseta. The high plains. Cold winters, fierce summers, and a food culture built on patience and pride. Morcilla from Castilla y León is unlike anything else you will find. Rich with rice, fragrant with pimenton and oregano, soft and deeply savoury. Paired here with sweet roasted pimientos that cut right through the richness. Simple. Perfect. Completely Spanish.
