May in the UK is when spring produce truly comes into its own.

Head over to website to find two seasonal recipes from our brilliantly talented Development Chef, Ella Gibbons. Ella has been cooking since she left school, building an impressive career across some of London’s most exciting kitchens. We’re very lucky to have her.

You’ll find a fresh spring salad of little gem, peas, broad beans, herbs and pickled shallots; and grilled mackerel with a bright green chermoula made from fresh herbs, toasted spices, garlic and citrus for a dish that’s full of freshness and smoky flavour.

Exciting news on Rupert Street...

We’re thrilled to share that Simon has been promoted to General Manager of The Palomar!

Simon joined us in April 2023, and has since worked across the group, including Neal’s Yard and Notting Hill, before returning home to Rupert Street last year.

A familiar face to many of our guests, we couldn’t be happier to see him step into this role.

Join us in congratulating Simon and wishing him and The Palomar team all the best for what’s ahead! 🥂

Matthew joined us in autumn 2022 as Restaurant Manager and made a fantastic impression from day one. After owning the floor for a couple of years, he was promoted to General Manager in autumn 2024 and really set about making the role his own. Under Matthew’s stewardship, the team flourished as he brought The Palomar into its new era and led us through our 10(ish) birthday celebrations.

We were very sad to hear of his decision to move on, but naturally incredibly excited for him as he steps into the next chapter of his career.

Thank you, Matthew, for everything you have brought to 34 Rupert Street. Wishing you every success and happiness in this next chapter - you will be missed.
