TENrei: The Art of Tuna Ceremony

Held twice a month at Los Mochis London City, TENrei is Chef Leo’s tribute to a centuries-old tradition rooted in Japan’s fish markets. It's where chefs, vendors, and buyers gather to witness the careful breakdown of a whole tuna, each cut respected for its unique flavour, texture, and purpose.

It’s a practice grounded in precision, patience, and deep respect for the fish, the tools, and the craft and it’s one we bring to life at Los Mochis.

The experience begins with the unveiling of a whole, uncut tuna, followed by a traditional Japanese butchery led by Chef Leo, using handcrafted knives and years of honed skill.

Across 10 courses, guests explore the full character of the fish, from lean akami, to buttery chutoro, to the prized richness of otoro, served piece by piece, at the exact moment it’s at its best.

TENrei: The Art of Tuna Ceremony.

The experience begins with the unveiling of a whole, uncut tuna, followed by a precise, traditional Japanese breakdown led by Chef Leo, using handcrafted knives and years of skill.

Across 10 courses, guests explore the delicate flavours and textures of each cut, from akami to chutoro and the prized otoro, served immediately as they’re prepared.
