BANGERS AND MASH NIGHT!
This is my variation on a theme bangers and mash, inspired by our good friend, Edrick, who loves our pepper jelly!
I have done this with red cabbage, white cabbage, green cabbage, and tried it with all flavours of our pepper jelly.
So you’ll need:
1 pack of at least 8 of your favourite sausages,
Half a large cabbage, shredded
1 1/2 larger onions, sliced… or more if you want, (I love onions)
2 Tbsp GENNY GRAHAM pepper jelly (your favourite flavour)
3/4 a cup of water
1. Set your over at 200 C.
2. Toss your shredded cabbage and onions in your oven proof dish and mix them up nicely with your pepper jelly.(Your dish should be deep enough to take the cabbage and just accommodate the sausages on top)
3. Pour over the water.
4. Prick your sausages with a fork and place them on top of your pepper jelly seasoned cabbage mix, completely covering the cabbage. The cabbage will steam under the sausages.
5. Place into your hot oven for about 40 mins turning the sausages half way through cooking time.
6. The sausages should be cooked and browned and the cabbage melt in the mouth soft!👌🏾
MEANWHILE …
1. Peel your potatoes and make your mash as you desire!

I regularly make this, dish but this time around, it was different as at the last minute, I realised that didn’t have enough potatoes. So I used what I had, as of late we are eating more vegetables to get more healthy!
What I used that was in my fridge was some cooked white cannellini beans, some cauliflower and the small amount of potatoes I had. So it was about 1/3 of each ingredient. Once prepped and cooked and with a clove of garlic, I drained the water off and blended them up together with some butter, salt and pepper, and added some chopped dill at the end!
Hey presto! A creamed vegetable dish to accompany my sausages! It was so yummy!
You really must try this, it’s so simple.
