Nothing beats the joy of tasting appam straight from the roadside home- rich in flavour, rich in history!

In the old days, after returning from fishing early in the morning, fishermen and their families would make appam - a fermented rice flour pancake cooked in a small wok. It was quick, used simple ingredients they already had (rice, coconut, toddy or yeast for fermentation), and gave them the energy they needed for the day.

These “appam stalls” started appearing near the shores (odai karai), serving fresh appam and coconut sambal or fish curry to locals and travelers. Over time, it became more than just food, it was a symbol of community, freshness, and Jaffna’s coastal lifestyle.

Today, many families still carry on that tradition, cooking appam at home or in small stalls, keeping those recipes alive.
