Welcome to another Sunday Pranzo with Mamma!

If there's one dish that feels like a warm hug, it's the classic Polpette al Sugo.

We're talking incredibly tender meatballs in a rich, simple tomato sauce, just the way it should be done.
Mamma's secret? Soaking crusty bread in milk for that lovely, rich flavour.

For the Polpette:

120g beef mince (or a beef and pork mix)

1 tbsp grated Parmigiano Reggiano

20g stale bread (soaked in milk)

1 tbsp chopped fresh parsley

½ small garlic clove (crushed)

Salt and black pepper

Olive oil (for browning)

For the Sauce:

150g tomato passata

1 tbsp olive oil

½ garlic clove

2–3 fresh basil leaves

Salt to taste

Method:

Prepare the mixture: Soak your stale crusty bread in milk, then squeeze out the excess liquid. Mix it with the mince, Parmigiano, garlic, parsley, salt and pepper.

Shape the meatballs: Rub a little olive oil on your hands (no sticking!) and get rolling. Shape the mixture into 3–4 small meatballs.

Brown them: Heat a drizzle of olive oil in a small frying pan. Brown the meatballs evenly on all sides. Che profumo!

Prepare the sauce: In a separate small pan, lightly fry the garlic in olive oil. Pour in the tomato passata, season with salt, and let it simmer for 5–7 minutes.

Finish cooking: Gently, gently drop your browned meatballs into the sauce. Piano, piano. Let them simmer nice and slow for 15 minutes. Tear in the fresh basil right near the end.

Serve them up with some crusty bread to mop up every drop of that lovely sauce. Sunday lunch, sorted!

Welcome to Sunday Pranzo with Mamma!

Mamma Sara shows us how to make the best aubergine pasta ever!
Simple recipe, incredible taste.

Golden, fried aubergines tossed in a rich, garlic-infused tomato sauce and finished with a mountain of grated ricotta salata.
It’s simple, authentic and absolutely delicious.

Ingredients

100g pasta

1 medium aubergine

120–150g tomato passata

1 small garlic clove

4–5 fresh basil leaves

20–25g ricotta salata (grated)

Olive oil

Salt & Black pepper

Method

1. Prep the Aubergine: Cut into cubes, lightly salt and leave for 10–15 minutes. Pat dry with kitchen paper.
2. Fry to Perfection: Heat a few tablespoons of olive oil in a pan. Fry the aubergine cubes until golden and soft, then set aside on a paper towel.
3. Make the Sauce: In a pan, lightly sauté the garlic in a splash of olive oil to flavour it. Remove the garlic from the pan, then add the passata and a pinch of salt. Simmer for 8–10 minutes, then stir in the fresh basil.
4. Cook the Pasta: Boil your pasta in salted water until al dente.
5. Toss it Together: Add the pasta to your rich tomato sauce. Mix in most of your fried aubergine.
6. Serve & Enjoy: Plate up and top with the remaining aubergine, a generous dusting of ricotta salata and a fresh basil leaf!

We are so excited to announce that, for the first time ever, the Mammas are part of Chelsea in Bloom, the incredible, free to attend, annual Floral Art Competition in Chelsea!

This year’s theme is “OUT OF THIS WORLD”, so we decided to bring back BBC’s iconic straight-faced SPAGHETTI TREE prank broadcasted in 1957 😂

Our King’s Rd facade transforms in a playful Italian orchard where spaghetti appears to bloom, just as London was once told to believe.

This is a meeting point of two cultures that don’t take themselves too seriously. British humour, dry and perfectly delivered meets the Italian kind: warmer and louder, often around the table.

The result is a playful collision of fantasy and heritage brought to life in the restaurant’s window by our Mammas, where you can see the secret behind fresh pasta: traditions & skills.
