For Chef David David Chelidze nettle is a taste of Georgian summers โ wild, green, and worlds away from the meat-filled khinkali you know.
He has paired that memory with something entirely English: Baron Bigod Brie. Earthy meets creamy, gently bound by a green adjika that trades its usual punch for something fresher and more herbaceous.

Why wait until evening?
At first, khinkali were reserved strictly for dinner.
But after enough longing looks, enough hopeful questions, and more than a few โsurely you serve them at brunch?โ โ we finally gave in.
So here they are.
