10-minute rice paper cheung fun hack🍤 full recipe below
ingredients [makes 3]:
🍤 80g raw peeled prawns or shrimp
🍚 6 pcs of rice paper
🌱 3 stalks of chopped spring onion
🥄 1 tsp sesame oil
🌶️ itsu crispy chilli oil
🥄 top with soy sauce and black vinegar
briefly dip the rice paper in cold water and lay it onto a board. place 4 prawns in a line with a sprinkling of chopped spring onion.
tuck the top and bottom of the rice paper in to seal in the prawns, then gently roll the rice paper like you would a burrito. repeat with a second layer of rice paper to secure.
rub some sesame oil onto a heat-proof plate and place the cheung fun on. steam for 7-10 minutes depending on how large the prawns are.
top with crispy chilli oil, soy sauce, and a touch of black vinegar. enjoy!

dumpling filling mix:
🥩200g minced beef
🌱4 green onion [finely chopped]
🥬 1/2 cup cabbage or pak choy [finely chopped]
🫚 thumb of grated ginger
🧄 cloves of grated garlic
🥄 1 tbsp soy sauce
🥄 1 tbsp mirin/shaoxing rice wine (optional)
🥄 1 tbsp itsu teriyaki sauce
🥄 1 tsp sesame oil
🥄 pinch of pepper
ingredients:
🥟 frozen dumpling wrappers
🥕 shredded veg [carrot, cucumber and cabbage work well]
☘️ top with coriander or spring onion
🌶️ itsu crispy chilli oil
start by finely chopping cabbage and salting it to release moisture. combine the dumpling filling ingredients (including the strained cabbage) and stir until combined.
spoon 1.5 tbsp of the mixture onto defrosted dumpling wrappers, and firmly spread up to the perimeter of the dough.
grill on medium high heat for 5-7 minutes or until it develops a brown crust, pressing firmly like a smash burger patty. flip and finish on other side for 2 minutes.
serve with fresh shredded veg, and extra drizzle of teriyaki, and crispy chilli oil.

sticky teriyaki pulled pork ramen🍜 full recipe below
ingredients [serves 2]:
🥢 itsu restaurant’ramen original noodles
🍜 classic ramen brilliant’broth
🥩 oven-ready braised meat of choice [asian flavours pair best]
🥚 2x eggs
🥬 2x pak choy
🌽 small tin of sweetcorn
🥄 crispy chilli oil
🌱 spring onion
cook the braised meat per pack instructions [typically around 30 minutes] and get started on the other toppings.
cook eggs for 5 minutes on a gentle rolling boil for the perfect runny yolk. for extra flavour, grill corn and pak choy in a pan on med-high heat until they get some colour.
5 minutes before the meat is done, simmer the noodles and broth. assemble the ramen bowl with all the fixings and enjoy

ep 3: ponzu tuna tostadas🌮🍣
ingredients [makes 6]:
🍣150g of sashimi [or 2 boxes of itsu sashimi]
🥑 1 avocado
🥟frozen dumpling wrappers [can sub with tortillas]
🫒olive oil spray
🌱top with chives, sesame seeds & sliced onion
restaurant-inspired ponzu sauce:
🥄 2 tbsp soy sauce
🥄 1 tbsp mirin
🥄 1 tbsp lime juice
🥄 1 tbsp lemon juice
🥄 half a tsp honey
🥄 half tsp grated ginger
🥄 half a clove of grate garlic
start by making the crispy tostadas, spray both sides of the dumpling wrapper with oil and bake on a tray for 7 minutes at 180c, flipping halfway.
dice the sashimi, and dress it in the ponzu sauce 10 minutes before serving [any longer will cure the fish]. thinly slice the avocado, chives and red onion. assemble and finish with sesame seeds and a touch of spicy mayo.

ingredients:
🥬 1 large napa or 2 chinese cabbage
🥩 500g thinly sliced beef or pork [can be found in hotpot or frozen sections of asian supermarkets]
🌱1 pack soft tofu
🍄🟫 handful of mushrooms [we used shimeji]
🥣 2x classic ramen brilliant’broth
method:
thoroughly wash the cabbage leaves and layer it with the thinly sliced meat. chop into 2-3 segments depending on the height of your pot.
arrange cabbage and meat, leaving the centre hollow for some diced tofu and mushrooms. pour in the brilliant broth and simmer with the lid on for 15-20 minutes on medium heat.

ingredients [serves 4]:
🥬 1 chinese cabbage
🍄🟫 300g mushrooms [we used half chestnut and half shimeji]
💧0.75l water
🧈 1 block soft tofu
🌱 6 stalks spring onion
🍗 chicken stock cube
🥄 1 sachet itsu chilli miso
🥄 3 tbsp soy sauce
🥄 crispy chilli oil to garnish
method:
bring water to a boil and season with stock cube and soy sauce.
add in washed and chopped veg, then simmer with lid ofn for 15-20 minutes.
when cabbage is fully translucent, turn off the heat and add the chilli miso paste and cubed tofu.
finish with green onion, sesame oil, and crispy chilli oil for that final kick.
