One word: Ragù ✨
The word “ragù” is an Italian term used in our cuisine to generally describe a meat-based sauce, usually cooked slowly for several hours 🥫🥩
Ragù can be made with different types of meat or different cuts of the animal, and each one has its own distinctive flavour, which we Italians can quite easily recognise from one region to another 🇮🇹
For example, Neapolitan ragù will be slightly different from Genoese ragù, even though they are essentially the same type of dish.
This is also the great beauty of Italian cuisine: you can eat the same dish, but the recipe will vary slightly depending on where you are, creating so many delicious nuances shaped by biodiversity and by the abundance or lack of certain ingredients.
There isn’t much more to say, because to truly understand it, there’s only one thing you can do: taste it 🍝😋

In Italy, you can tell when someone is cooking by the smell before you even see what’s on the table.
The sauce has been simmering for a while.
Someone walks into the kitchen and lifts the lid.
“È pronto?”
“Ancora cinque minuti…”
That’s more or less how we feel about a good plate of cavatelli with sausage and ’nduja.
A sauce that needs its time, pasta that has to catch it at just the right moment, and enough left on the plate to make “la scarpetta” impossible to resist ❤️🇮🇹

There’s a certain rhythm to an Italian dinner 🇮🇹
You arrive thinking you’ll just have a quick bite.
