Bread, bun, pav, pain (French) or panini call it what you may.. but these turned out to be one of the best yet. Easy recipe to follow with great results. Super soft flavourful buns for burgers! ππ

Recipe for ladi pav/buns
1tsp active dry yeast
2tsp sugar
2 1/2 cups all-purpose flour
200ml milk
Salt to taste
Separate small amount of milk
A small stick of unsalted butter
First of all, add yeast and sugar in a large bowl. Pour lukewarm milk, cover and rest of 15 minutes. After the yeast has bloomed add the flour and then the salt. Mix the dough together. At first the dough will be sticky but it will start to come together. After 5 minutes of kneading add a tablespoon of softened butter and start kneading again for 10 minutes. Until the dough doesnβt stick to the bowl. Spread some oil or rub some butter on the bowl and place the dough back in it covered with oil or butter. Cover with cling film and let it proof for 60 minutes. This is the first proof.
After 60 minutes the dough will have doubled in size. Now weigh the dough and divide equally in 9 parts. My dough usually weighs around 650-680 grams so my 9 equal pieces is around 75 grams. Rub butter all over the pan. Now take one piece of the divided dough and shape by flattening it a little and bringing it together and rolling between your palms. Place it in the pan. Follow with the rest. Keeping some gap between the bun pieces. Cover and let its rise for another 30 minutes. This is the second proofing. 20 minutes into the proofing preheat your over to 200c. After 10 minutes uncover the pan brush milk on the dough and sprinkle sesame seeds (optional). Place in the oven for 25 minutes at 200c. After 25 minutes take out of the oven. Buns should have browned evenly.
Brush generously with butter and cover and rest for another 20 minutes. The butter will help make the buns softer. Enjoy on its own, make burgers, pav bhaji or vada pav. The options are endless. Make and share your successes with me!!
Folks I am baking with both rods on top and bottom and have moved the baking tray to the lowest rack to bake the pav. NOT top or middle but the lowest as I feel this gives me the best option the bake the pav also I have a Reliance reconnect OTG.
