"Slaaaay!" โ apparently that's what all the Gen Alphas are saying these days...
One of the perks of being a cake maker? My children definitely get some of the best birthday cakes! ๐
For this one, my daughter came armed with a very clear brief. As she constantly reminds me, she's Generation Alpha, so naturally the cake had to be stylish, fun, on trend and, in her words, "an absolute slay."
This cake was made even more special because our work experience student, Phoebe, helped bring the design to life. It was wonderful watching her creativity shine and seeing her contribute to a cake that meant so much to my daughter.
But the real reward wasn't the cake itself...
It was seeing that huge smile on my daughter's face when she saw the finished design.
As cake makers, we spend hours planning, baking and decorating, but moments like that remind us why we do what we do. Creating memories is every bit as important as creating cakes.
And judging by that smile, I think we understood the assignment.

Seeing as itโs Essence of Cakeโs 9th birthday, I thought Iโd share some of the quick tips Iโve picked up along the way.
First up: getting fondant out of Alpha Cutters.
If youโve ever used letter cutters and found yourself battling to get the fondant out neatly, this little trick may save you a lot of frustration.
And the tool?
A paintbrush.
Yes, really. A simple paintbrush can help ease the fondant out without damaging the shape or losing those clean edges.
Sometimes the best cake decorating tools are the ones you already have lying around at home.

When your client says "Avatar"... and your imagination goes into overdrive!
One of the things I love most about cake design is taking an idea and bringing it to life before I even turn on the oven.
For this Avatar-themed birthday cake, I decided to take a slightly different approach. Before creating the final design, I mocked up the concept in ChatGPT to help visualise how the finished cake could look. It gave me a chance to play with colours, layout and overall design direction before I started decorating.
The result? A cake that captures the beautiful blues, underwater feel and magical world of Pandora, complete with an edible printed wrap and shades of blue buttercream piping that tie everything together.
Technology might help spark the idea, but there's still something special about turning that digital concept into a real cake that someone can celebrate with.
And let's be honest... Avatar gives cake decorators a dream colour palette to work with!

Sometimes the opportunity you wanted doesn't arrive in the package you expected...
Earlier this year, I was incredibly excited about the possibility of travelling to Paris to speak at the ๐๐ฎ๐ซ๐จ ๐๐ฅ๐จ๐๐๐ฅ ๐๐จ๐ฆ๐๐ง ๐๐จ๐ฐ๐๐ซ ๐๐ฎ๐ฆ๐ฆ๐ข๐ญ ๐๐๐๐ค.
Unfortunately, I wasn't able to make the trip.
But as I've learnt many times in life and business, when one door closes, another often opens.
Instead, I was given the opportunity to be part of the virtual summit and had the absolute privilege of being a Keynote Speaker, closing one of the event days alongside an incredible line-up of women from around the world.
Standing up and sharing my story, experiences and lessons learned was both exciting and nerve-wracking. And it was humbling to receive the support, encouragement and belief of so many people around me.
So this post is really a thank you.
Thank you to everyone who cheered me on, listened to me practise (my mum/my rock ๐), offered advice, sent messages of encouragement and reminded me that I was capable of doing this.
Your support helped make this happen.
I've included my talk below and I hope you enjoy watching it as much as I enjoyed delivering it.

Some cakes never go out of style...
Fifteen years ago, I made my very first commissioned decorated cake, and it was a Mickey Mouse cake.
At the time, cake decorating was just a hobby. I had no idea it would eventually become a business, a career, and such a huge part of my life.
What I do remember is the feedback from the birthday party. The mum got in touch afterwards to tell me the children were crying because they didn't want her to cut Mickey! ๐
As a cake maker, that's probably one of the biggest compliments you can receive.
Fast forward 15 years and Mickey Mouse is still one of my favourite themes to create. There is just so much you can do with the design. From classic Mickey silhouettes and bright colours to personalised toppers, balloons and favourite characters, every cake can be completely unique.
This latest Mickey-themed birthday cake brought back so many memories of where it all started and reminded me just how far the journey has come.
From hobby baker to celebrating 9 years of Essence of Cake, I'm grateful for every cake, every customer and every little piece of magic that gets created along the way.
And yes... I still secretly hope nobody wants to cut Mickey.

For the first time, the award has my name on it... not my business.
I am absolutely thrilled and incredibly humbled to share that I have been named the Winner of the Great Companies 8th International Women Entrepreneurs Award 2026.
Over the years, Essence of Cake has been fortunate enough to receive recognition and awards, and every one of them has meant the world to me. But this one feels a little different.
This award recognises me.
The woman behind the cakes.
The woman who took a leap of faith 9 years ago and started a business from her kitchen table.
The woman who rebuilt her business after relocating, embraced networking in a new city, balanced family life with entrepreneurship, and continues to pursue opportunities to learn, grow and give back to her community.
Running a business can sometimes feel lonely. There are early mornings, late nights, risks, setbacks and countless moments of self-doubt. That's why recognition like this means so much. It's a reminder that the journey matters, the hard work is noticed, and that believing in yourself is always worth it.
This award isn't just mine. It belongs to everyone who has supported me along the wayโmy family, my clients, my networking connections, my mentors, my friends and everyone who has trusted me, encouraged me and cheered me on.
Thank you for being part of my journey.

When I lived in London, drowning prevention was never something I really thought about. Living in Portsmouth has completely changed that.
Being surrounded by the sea every day is one of the things I love most about living in Southsea, but it also brings responsibilities that many of us don't always consider.
This week is National Drowning Prevention Week, a campaign dedicated to raising awareness and helping people stay safe around water.
That's why I'm delighted to be supporting and promoting the WRAP Community & Family Fun Day at Camber Docks in Old Portsmouth.
Not only is it a fantastic opportunity for families to enjoy activities, arts and crafts, food, sports and games, but it's also a chance to connect with some of the incredible local organisations that work tirelessly to support young people, strengthen communities and promote water safety.

Today's tip is all about painting with gold (and silver too!).
One simple trick can help you achieve a more even, vibrant finish while using less product and saving valuable decorating time.
The secret? It's all about what you paint underneath first.
For gold, start with a yellow base.
For silver, use a grey base.
It sounds simple, but it makes a huge difference to the final result, helping you achieve a cleaner, more refined metallic finish.
