Courgette fritters, dill & feta, tzatziki.

The simplest of ingredients: pale courgettes, grated, loads of dill, crumbled feta, spring onion, then chickpea flour & fizzy water for the batter. 2-3 minutes either side on the plancha, serve these fritters with cooling mint & cucumber yoghurt, chilli flakes and loads more dill!

Warm potato salad, mashed roughly and while still warm, seasoned with copious amounts of warm olive oil, finely chopped green pepper and shallot, then moscatel vinegar, parsley and salt.

We scoop a spoonful and place in the centre of a gem lettuce leaf and stick an anchovy on top. Only the best, Ortiz from Brindisa of course.

Salmorejo is a thicker version of gazpacho made with more tomatoes and more olive oil, so it is rich and creamy. Just excellent with some seared Cornish Bluefin tuna, olive sauce & oregano.
