A new dessert harking back to an old idea that chocolate is best enjoyed in its darkest form but with rich and sweet as well as strong and bitter flavours to balance. A mousse is served with toasted buckwheat creme anglaise and a textural crunch comes from a buckwheat and cocoa nib tuile.

10 years ago this month, we were two months old and finding our feet (ish). The critics had been in, as had many of you and thanks to the forbearance and support of our wonderful regulars (as they would become) we had started to get into a bit of a rhythm.
To celebrate this happy time, September’s Early Evening £20.16 menu brings back 3 classics from our menu 10 years ago precisely - three ideal dishes for late summer eating. A fatty duck rillettes cut through with pickled plum and mustard, sea bream with brown shrimp and celeriac and buttermilk panna cotta.

Ham hock terrine, pickled carrot & Coolea
This mini-ploughmans first course has been flying off the pass since day one - perhaps because to many of you it fulfills an atavistic desire for that wonderful creation without the enormous quantities normally associated with it. Our version features many element loving made in-house and served in almost Lilliputian portions compared to classic pub fayre but all bursting with flavour. A terrine made with smoked and un-smoked ham hocks and plenty of wholegrain mustard, pickled carrots and an intense grape mustard. All perfect partners for my desert island cheese - the caramel-y nutty Coolea from County Cork

A new first course and three stunning summer flavours - a chilled almond soup served with melon and prosciutto. Ideal with a glass of orange sauvignon blanc from SLOBODNE in Slovakia’s Little Carpathians.

Agrodolce, the Italian blending of sweet and sour often in the form of vinegar meeting sugar or honey, offers a lovely, appetising range of flavours for Summer. It’s found in a few of our dishes currently but works most famously in a caponata which now adorns our Summer menu served simply with a soft boiled egg.

A house classic and much-loved, our breaded pork loin chop has, despite its heft, remained a hit across this sunniest of Summers. We brine the chops for 24 hours in black treacle, salt, brown sugar, black pepper, juniper and bay before washing it off, crumbing and frying until perfectly golden. Served with a parsley bechemel, fried egg and diced capers and cornichons.

HERE WE GO! A big welcome to the much beloved Denis who has made his way across from Portland to take up the position of Head Chef here at Clipstone in what many are calling the move of the summer transfer window. Denis is a wonderful chef and colleague who has worked with us at The Quality Chop House prior to his stint around the corner at Portland. We are absolutely thrilled to have him in situ with the equally wonderful Kat our GM and having seen a sneak peak of Denis’ new menu we think you will be too!

After such a warm reception over the past few months, our £20.16 Early Evening menu continues into August with three more storied dishes from our first decade.
The summer heat has shown little sign of relenting, so we’ve adapted accordingly. A carpaccio of hogget with sheep’s curd, tomato and sea herbs feels just right while the evenings still begin in short sleeves. Roast chicken with pommes purée and wild mushrooms follows, substantial enough for when the temperature eventually drops, before a fig and hazelnut frangipane tart makes the most of one of late summer’s finest fruits.
Yours for £20.16 every evening for reservations from 5:30pm to 6pm throughout August.

Whilst Milan, Florence and Turin fight bitterly about who is the original creator of the affogato, we are just happy someone, wherever they were from, came up with the idea of drowning a scoop of ice cream in espresso coffee. We find our beautifully-sweet soft-serve-y vanilla ice cream ideally suited to the task and this has been flying out at lunchtime as guests opt for a sweeter than normal caffeinated hit to send them back to the office.
