There is a great deal that happens behind the scenes before a wedding cake arrives at the venue, and this design was no exception. From the first sketch to the final sugar flower, this five‑tier cake took six days to create.
When this last‑minute order came through for a wedding at the Four Seasons Hotel in London, I knew I wanted to make it happen for my couple. Although my designs usually involve many hours of planning, baking, decorating and refining the smallest details, a shorter turnaround simply means there is no room for hesitation. Experience becomes essential.
Understanding my couple’s vision quickly, making confident design decisions and bringing everything together within a tight timeframe is a skill I have developed over many years. Every tier must be structurally perfect. Every decorative element must be placed with intention. Every sugar flower must feel lifelike and in harmony with the overall design.
Seeing the finished cake in place at the Four Seasons Hotel, and then receiving a message the following day saying how delicious it was, made every late night and every handcrafted detail worthwhile.

After so many years creating luxury wedding cakes for my lovely couples, it felt like the right time to refresh my brand a little.
While the logo may have changed, the heart and dedication behind the business remains exactly the same. Have you thought about how your wedding cake will be presented.
Your cake can become a beautifully considered focal point within the room, and the way it is styled and displayed can quietly elevate its presence. Thoughtful presentation allows the design to breathe, and helps it sit harmoniously within the wider aesthetic of your day.
Some styling elements that can work beautifully are:
• sculptural floral arrangements placed intentionally around the cake
• soft candlelight to create a romantic, atmospheric glow
• a champagne tower positioned nearby for a sense of celebration
• draped or textured linens that add depth without distraction
• a curated dessert table that complements the cake’s palette and design
• personalised details or subtle signage
• a dramatic backdrop for evening moments
The most important thing is that your cake is presented in a way that feels right for you and the atmosphere you want to create. Styling should enhance the design, never overpower it.

Should you consider your venue when designing your wedding cake.
I do believe a cake feels most at home when its design sits comfortably within the space it’s placed in. A refined floral composition can feel beautifully at ease in a soft countryside setting, while an architectural silhouette may resonate more naturally within a contemporary city venue.
When the cake and the environment speak the same visual language, the overall aesthetic of the day feels cohesive, intentional and quietly elevated.
But I always remind my couples that the venue is only one part of the story. Your cake should still feel unmistakably yours.
Choosing a design purely because it “matches the venue” rarely leads to something meaningful. The most memorable cakes are the ones that balance both — a piece that complements the space while still carrying personal details that reflect who you are.
That might be a subtle nod to your dress, florals that hold significance, a palette that feels instinctively “you”, or small design cues drawn from your story together.
There is a beautiful middle ground, and finding that harmony between space, style and personal meaning is one of my favourite parts of the design process.

Sugar flowers vs fresh flowers… can you really tell the difference
One of the things my couples say most often is how lifelike my sugar flowers look.
That realism comes from hours of shaping, colouring and layering each petal by hand — a slow, intentional process that gives each bloom its softness, movement and tone.
Fresh flowers may look beautiful in bouquets, but they should never be placed directly onto a wedding cake. Most wedding florals — including roses, peonies, eucalyptus, gypsophila and ranunculus — are toxic when they come into contact with food. A wedding cake is a food item first, and every element must be safe.
Sugar flowers give complete freedom in design.
They can be created in exact colours, sculpted into specific shapes, and placed safely anywhere on the cake. They also allow me to include blooms that aren’t in season, or recreate flowers that hold personal meaning for you.

What actually makes a wedding cake feel luxurious?
Luxury isn’t about size, height or adding decoration for the sake of it.
For me, true luxury sits in the thoughtful details behind each design.
It’s the time taken to create something that feels completely personal to you as a couple — a cake that feels connected to the rest of your wedding rather than separate from it.
Often, it’s the smallest details that make the biggest impact.

It has been quite a week… our gorgeous grandson Avery decided to make an early appearance 🧸🩵 and we are completely smitten. Add to that a five tier wedding cake that was ordered only a week ago, and it has been a beautiful whirlwind. I will catch up with messages as soon as I can — for now we are soaking up newborn cuddles and feeling very grateful.
