It's our 4th Birthday and whilst it might be our 2nd year of sadly being closed for the occasion, we've got plenty to look forward to ๐ฅณ

Go coco-nuts this weekend for our mouthwatering Coconut Popcorn Chicken recipe ๐คค ๐ฅฅ
To make this, you will first need to mix together the following ingredients and allow the chicken to marinate for at least 1 hour in the fridge:
400g chicken breast, cut into bite-size cubes
50ml coconut milk
75ml buttermilk
2 tsp cajun seasoning
1/2 tsp dried oregano
To finish the recipe, you will need:
200g plain flour
50g Thai sweet chilli sauce
10g desiccated coconut, toasted
20g fried BBQ corn
Handful chopped coriander
Once marinated, heat a deep fat fryer or a pan with oil to 160 degrees. Meanwhile, fill a bowl with the flour and roll the cubes of chicken in the flour to coat the chicken. Then, once all cubes are coated, carefully drop them into the hot oil. Cook the chicken for 7 minutes until crispy and golden then drain on a plate with a paper towel.
Place the chicken in a bowl and generously coat it with the Thai sweet chilli sauce. Then, move the chicken to a serving plate and top with the desiccated coconut, fried BBQ corn and a handful of chopped coriander.
