Is it cold brew season yet?? Absolutely 💯 But have you got your recipe ready?
We usually work on a similar ratio to filter brew:
60g coarsely ground coffee
1 litre of water
1️⃣ Add coffee and water to your vessel of choice and let it steep for at least 8 hours.
2️⃣ Strain off the coffee grounds through a coffee filter and voila! You have cold brew. This is just a guidance recipe - try and experiment with different beans, the time you let it steep, and the coffee to water ratio to find a brew you prefer.

This is what specialty coffee should be - exciting, experimental, and constantly evolving!
We’re bringing back Evin Moreno for the third season and we are soooo pumped about this release! This year we’re going even bigger - the same variety from the same producer, processed 3 different ways: washed, natural, and honey 😱
This is a real interesting opportunity to taste the impact of processing. Like last year, we have sourced Evin’s SL28 variety - also interesting in its own right, being a variety discovered and mostly grown in Kenya 💪

Milk texture can make or break a coffee experience 😱 In fact, consistently silky, well-textured milk can have a bigger impact on perceived quality than the chosen coffee roaster 🤎 Here are three of our top tips when it comes to steaming milk both at home and in your shop

Meet the producer - Aurelio Villatoro, Finca La Esperanza 🇬🇹 Finca La Esperanza’s current owner, Aurelio Villatoro, has an indomitable energy that is as infectious as his smile. Aurelio dedicated himself diligently to his studies and became a mechanic but later returned to Finca La Esperanza, his father’s farm. His hope was to continue the work of farming with his father, and in 1986 he founded his own farm called “Villaure”. At first, his plot of coffee was very small, but with enthusiasm and dedication, he increased productivity and slowly bought more lots. From 2002 and to date, the family has received numerous awards nationally and internationally.

Why is Marcello smiling like that you might ask? Because it’s new single origin day! 😍 Finca La Esperanza from Guatemala has just landed on our shelves and we all love it here at the roastery. Expect tasting notes of strawberry yoghurt, apple cider, and blueberries

Alexandra’s farm, Finca El Llano, is part of Café Ceres, a family-owned micro-mill located in El Quemado in Costa Rica’s iconic Tarrazzú coffee region 🇨🇷 For over twelve years, this project has been led by a mother and daughter who came together with the shared dream of producing coffees with identity, care, and quality. Their microlots reflect a deep connection to the land and a strong commitment to sustainability and harmony with its surroundings. What’s not to love? 😍

We quietly launched a new producer in Uphill and for the second season we have Nelson Ramirez from Honduras back 💪💥
For those of you who don’t know Nelson Ramirez, you’re in for a treat 😍 He’s a pioneer in biodynamic farming practices and in recent years, he has also worked to reduce the amount of waste his production generates. On top of reusing the water from washing his coffee, he has also built a vermicompost - an approach that uses earthworms as well as bacteria to break down organic waste. Essentially he turns the pulp and part of the waste water into fertiliser.

We’ve been sipping Baima at the roastery all week ☕️ It has surprised and delighted visitors and it’s quickly becoming a favourite with the team 🧡❤️
The Baima farm is located in the Yunnan province and is run by Laicheng D**g. Laicheng returned to his home town in 2010 and has been growing coffee ever since.
Responsible for over 97% of China’s coffee production, Yunnan is mountainous and fertile. Over half of its coffee production is concentrated around Pu’er - a region famous for centuries old tea traditions. The focus on specialty coffee is relatively recent, with the past decade seeing smaller coffee farms and producers improving their knowledge and skills to produce better quality coffee.
Read more about China as a coffee growing origin in our latest journal post.

We’re celebrating Lunar New Year with this year’s Baima release 🐴🔥 It’s the third season we source coffee from this producer and we’re incredibly excited to have it back.
The Baima farm is located in the Yunnan province and is run by Laicheng D**g. It’s named after the mountain where the coffee grows, which translates to ‘white horse’. Very appropriate for LNY 2026!
