Served with our Sodale Merlot Lazio IGT, our Coniglio alla Stimpirata it's made almost completely of all ingredients from Sicily.
It is an ancient, traditional Sicilian dish, a long time ago it was a poor dish, today it has become the main dish of Italian cuisine... At the Fitzroy Wine Cellar and Kitchen has become a must.

DENOMINAZIONE DI ORIGINE PROTETTA
Classificazione : D.O.P. Salice Salentino Riserva.
Uve: 80% Negroamaro – 20% Malvasia.
Zona di produzione: Cellino San Marco (BR) Puglia.
Sistema di allevamento: Alberello (5.000 ceppi per ha).
Epoca di vendemmia: Prima/seconda decade di settembre.
Vinificazione: Pigiatura e diraspatura, macerazione a contatto con le bucce di circa 5-8gg, pressatura soffice e fine fermentazione in vasche d’acciaio a temperatura controllata; fermentazione malolattica svolta in barriques di Allier e maturazione su fecce fini per circa 12 mesi.
Affinamento: Acciaio inox – barrique.
Note organolettiche
Rosso rubino luminoso e profondo. All’olfatto ampio e complesso, risaltano le note fruttate di confettura di more e fichi secchi seguite da un bouquet di fiori appassiti di viole e rose. Il finale distingue il tabacco biondo dai cenni di cuoio e spezie dolci. Articolato il gusto dove stupisce l’equilibrio assoluto tra morbidezza, tannicità, freschezza e sapidità. Il finale persistente e lungo caratterizza questa riserva di salice salentino.
Temperatura di servizio: 18 °C.
Appellation : D.O.P Salice Salentino Riserva.
Varietal composition : Negroamaro 80% - Malvasia nera 20%.
Vineyards location : Cellino San Marco (BR) Puglia.
Training : Alberello (5.000 stumps).
Harvest : First/second decade of September.
Vinification : After the crushing and de-stemming, the must remains in maceration in its skins for 5-8 days.
Soft pressing and final fermentation in steel tanks at controlled temperature. Malolactic fermentation in allier oak barriques and
Maturation on thin dregs for about 12 months.
Aging : In stainless steel - barrique.
Tasting notes
Bright and intense red ruby. At the wide and complex olfaction, stand out fruity marks of blackberry jelly and dried fig followed by a withered bouquet of violets and roses. The final discerns blonde to***co from hints of leather and sweet spices. The taste is surprisingly balanced between softness, tannicity, freshness, and sapidity. Ends long and persistent.

"Something magic happened tonight"..nice to go to work this morning and realize that there is more space than usual ... yeah, someone stole all tables from our outdoor seating area, probably they will contact us soon to negotiate an agreement ... the tables in exchange for a reservation and a plate of cannelloni della nonna 😂😂🤌🏼
