Finding the right spoon isn’t easy. Wooden spoons can ruin the flavour, plastic pollutes, and paper goes soggy, so we spent months testing and retesting seaweed cutlery alongside Notpla while they were developing them.

We like to break convention, and this time we’re taking it to the next level.

We’ve taken over the kitchen to introduce the Ice Cream Chicken Burger: A playful creation crafted to change your expectations of ice cream.

Fresh milk bun, a handcrafted banana ice cream is the “chicken burger,” paired with matcha chocolate to make up the “lettuce”, house-made raspberry sauce as “ketchup,” and spicy mango sauce for “mustard”. It looks like lunch, but it’s 100% dessert.

Sourcing fresh milk from The Estate Dairy. Hand-roasting nuts in-house to make our own pure pastes. Juicing Sicilian blood oranges only when they’re at peak season. 

We take the longer, harder path in the kitchen so that every flavour is honest, intense, and true.

We blend 70% Tuma Yellow dark chocolate and Red Mayan non-alkalinised cocoa powder, sourced directly from .gourmet Sourced for their deep, natural flavor profiles, they are balanced precisely during the churn to create a dense, velvety structure.

We’re celebrating 20 years this month, and we’re looking back to where it all started with the very first chef and restaurant to work with us, John Rattagan of Buen Ayre.

A true Hackney institution, Buen Ayre has been serving authentic Argentine cuisine with a focus on traditional charcoal grilling since 2004.
