We’re counting down to our 20th anniversary celebration next month, and we’re thrilled to be joined by the fabulous Patricia Michelson, founder of the award-winning .

As fellow champions of dairy, we couldn’t think of a better person to celebrate with. For more than 30 years, Patricia has been sharing a passion for exceptional cheese and supporting artisan producers through La Fromagerie.
Great cheese and great ice cream have a lot in common: exceptional milk, skilled makers and a commitment to quality.

Thank you, Patricia, for your kind words. We’re honoured to have you as part of our 20th anniversary celebrations.

“Mass production adds air to gain profit, making ice cream lighter so they can sell more volume,” Fubini says as he grabs a spoon for quality control. “We do the opposite: less air means a denser, creamier texture that feels better in the mouth.”

Ahead of our 20th anniversary this July, caught up with our founder Alex Fubini during London’s heatwave to talk all things ice cream, from texture and technique to what makes our approach different.

For this year’s Chelsea in Bloom theme, ‘Out of This World,’ we created a playful floral universe with ice cream at the centre of it all 🍦

Inspired by the joy our ice cream brings every day, the installation is a bright solar system of colour, texture and movement where scoops become suns and planets orbit in bloom.

Created in collaboration with The Bloom Room, the display combines creativity, sustainability and a little bit of magic.

If you love it as much as we do, you can vote for our floral display in the Chelsea in Bloom People’s Champion Award.

🌿 Elysium (paradise of the gods): pomegranate, lemon & fresh mint sorbet.

Gooseberry Fool. Inspired by the classic English dessert, we make the gooseberry compote in-house and mix it into the base of the ice cream with some yoghurt.

This not a ripple. You’ll find pieces of the fruit in your ice cream.

This is our craft. Made from scratch with real ingredients. Because flavour starts long before the churn.

Their commitment to using only the finest ingredients and producing everything by hand is evident in every scoop. The attention to detail is impressive, and it's clear that they take great pride in their craft.
