This is the perfect recipe to cool down in this heat! Sarah Vachon joins us in the Mindful Chef Kitchen to make her Green Gazpacho for Jesse to try ahead of our Mediterranean month!

Here’s what you need:
1 avocado
1 sweet green pepper
1 green chilli
4 baby cucumbers
1 garlic clove
130g young leaf spinach
½ small bunch of flat leaf parsley
½ small bunch of basil
½ small bunch of coriander
70g toasted cashews
20ml white wine vinegar
50ml extra virgin olive oil
200-300ml ice cold water
Salt and pepper

Blend everything until smooth and then cover and chill in the fridge for an hour!

Sarah Vachon, co-founder of Citizens of Soil, sat down with Jesse this week to talk all things Mediterranean diet on our podcast and she did not come empty-handed! She whipped up this gorgeous Harissa Bean Dip from their new cookbook, Drizzle!

Here’s what you need:
- 400g drained, butter beans
- 1 clove of garlic
- 1 tsp cumin
- ½ tsp sweet paprika
- Juice ½ lemon
- 3 tbsp extra virgin olive oil
- 1 tbsp harissa
- Few fresh mint leaves
- Salt and pepper

Place everything in a blender or food processor and blitz until smooth for the perfect hearty dip!

This ultimate one-tray Gnocchi bake is the answer to minimal cleanup and empty plates.

If you’re looking for a midweek dinner that’s high in protein, packed with veg, and topped with melty mozzarella, this is it!

Ingredients (Serves 4):
500g Pork mince (mixed with 2 tbsp sundried tomato paste)
600g Potato gnocchi
125g Mozzarella
2 Peppers & 2 Onions
400g Passata
2 tbsp sundried tomato paste
1 tsp Smoked paprika & oregano
10g Chicken stock
2 garlic cloves
Served with roasted broccoli 🥦

How to make it:
1. Mix pork with half the tomato paste & roll into meatballs.
2. Roast meatballs, diced peppers, and onion wedges in a dish for 21 mins (220°C fan). Toss the gnocchi and broccoli on a separate tray with oil and roast at the same time!
3. Whisk the passata, remaining paste, garlic, stock, and spices with 100ml water.
4. Stir the roasted gnocchi into the meatball dish, pour over the sauce, and top with torn mozzarella.
5. Bake for another 10-15 mins until bubbling and golden.

The secret to the perfect BBQ side? It’s all in the char. 👨‍🍳
Our chefs have designed the ultimate way to enjoy Cornish potatoes this season. The contrast of the hot, smoky potatoes against the cool, tangy labneh is a total game-changer.
Full recipe below! 👇
Ingredients:
750g Cornish potatoes
150g labneh
50g pomegranate seeds
The Zhoug: 35g coriander, 25g parsley, 1 lemon, 1-2 jalapeños, 1 garlic clove, ½ tsp cumin seeds, ¼ tsp green cardamom powder, 3 tbsp olive oil.

Method:
Zhoug: Pulse herbs, garlic, chilli, and spices. Add lemon juice, oil, and salt; blend until your desired consistency. Season to taste.
Potatoes: Part boil for 13-15 mins. Drain well. Wrap in a foil parcel with a drizzle of oil and seasoning.
Barbecue: Cook the parcel on the grill for 10-15 mins until the potatoes have those perfect charred edges.
Serve: Spread a thick layer of labneh, pile on the spuds, and finish with a generous drizzle of zhoug and pomegranate seeds.

We’ve been counting down the days, and they’ve finally arrived. Bursting with sunshine and grown just across the water, the iconic Isle of Wight tomatoes are officially back in our kitchen and starring across next week’s menu. If you know, you know, these are hands-down the best tomatoes in the UK. We’re heroing their incredible sweetness and acidity in some of our favourite upcoming dishes in many of next week’s dishes!

- Take the District Line to East Putney Station.
- From East Putney, it's about a 15-minute walk to Discovery House. Exit the station and head south on Upper Richmond Road, then turn left onto Putney Bridge Road.

2. **By Bus:**
- Several bus routes serve the area, including routes 37, 39, and 170. Check local schedules for the most convenient stop.
- Alight at the nearest stop and walk towards Discovery House.

3. **By Train:**
- If you’re coming from central London, take a train from Waterloo Station to Wandsworth Town Station.
- From Wandsworth Town Station, it’s approximately a 10-minute walk to Discovery House. Head east on Old York Road and follow signs toward your destination.

**Driving/Parking:**

- If driving, head towards Wandsworth via the A3 or A205 (South Circular).
