And with English Wine Week underway, it felt only right to begin with Folc.
Made with grapes sourced from independent, family-owned vineyards across Kent, Suffolk and Sussex, this is a dry English rosé with notes of strawberry, red berries, peach and citrus, crisp acidity and a clean, elegant finish.

Four new cocktails have joined our spring menu, each bringing something a little different to the bar.
Nom has been working hard on the new list, with fresh colour, lighter flavours and a few quietly confident twists for the season.
Holly Blush
Bright, citrus-led and gently warming, with cranberry, ginger and tequila giving it a beautiful lift.
Golden Hour Sour
Soft, peachy and smooth, with Woodford Reserve at the centre and a golden finish that feels very much like its name.
Melon Martini
Vivid, clean and fresh, with Midori, gin and citrus making it one of the brightest glasses on the menu.
Strawberry Garden Caipirinha
Fresh, fruity and gently tropical, with strawberry, lime, mint and cachaça bringing a little garden sunshine to the bar.

Another new addition to our spring cocktail menu, the Strawberry Garden Caipirinha is bright, fresh and gently tropical, with strawberry, lime, mint and cachaça coming together over ice. A beautiful spring cocktail, finished with mint and dehydrated lime.

We’re very proud to have Kyrah Henry at the helm of our kitchen as Head Chef, bringing together refined British cooking and the influence of her Caribbean heritage.
Kyrah has been at The Holly Bush for 10 months. Her food reflects both refinement and personality, shaped by two years in Michelin-starred kitchens and by leading kitchens in the Caribbean. Half Jamaican and half St Lucian, her style feels both polished and deeply personal.
She brings depth, identity and genuine care to the table every day, and we feel very lucky to have her leading our kitchen.

This 24-hour marinated jerk chicken supreme is a beautiful dish from our Head Chef, Kyrah Henry, rooted in flavours close to her heart and inspired by her Jamaican and St Lucian heritage.
Served with sweet potato purée, rice and peas arancini, grilled pineapple and corn salsa, and finished with a plantain crisp, it’s a carefully composed plate with warmth, colour and care in every element.

A beautiful new dish for spring from our brilliant Head Chef, Kyrah Henry.
Herb gnocchi with parmesan velouté, shaved asparagus, semi-dried tomatoes and fresh parmesan, each element carefully arranged on the plate.
Fresh, elegant and full of care, it reflects the thought and attention that goes into Kyrah’s cooking.
