Behind the Bustle - Episode Five
We are back with our Behind the Bustle series, a behind-the-scenes look at the inspiration, creativity and passion that fuel our kitchen.
Returning with a bang is our Fish Recheado Tikka, prepared by our Tandoor Master, Chef Giri.
A celebration of Goa’s coastal heritage, our Fish Recheado Tikka pairs stone bass with the bold flavours of traditional recheado masala. The word “recheado” comes from the Portuguese word for “stuffed” - a nod to Goa’s rich culinary history, where centuries of Portuguese influence met local ingredients, spices and seafood traditions. Today, the fiery, tangy masala remains a cornerstone of Goan cooking, known for its vibrant blend of chillies, vinegar and warming spices.
Finished in the tandoor, it’s a dish that brings together the best of India’s west coast and the craft of our kitchen.
