We are back with our Behind the Bustle series, a behind-the-scenes look at the inspiration, creativity and passion that fuel our kitchen.

This episode is all about our Trio of Dosa.

Dating back over a thousand years, the dosa is one of South India’s most celebrated dishes and a breakfast staple enjoyed across the region. Made from a fermented batter of rice and lentils, it’s known for its crisp exterior, soft centre and subtle tang - a testament to the simple ingredients and time-honoured techniques that define South Indian cooking.

Our Trio of Dosa showcases three unique fillings, each bringing its own balance of spice, texture and flavour while highlighting the versatility of this iconic dish. Freshly cooked to order, it’s a celebration of tradition, craftsmanship and the diversity of India’s regional cuisine.
