🍋 Introducing… the Luca 🍋
In 3 words: ‘Hugo’s cooler brother’
In more words: A dazzling concoction of gin, St.Germain, lemon sherbet, and a few cheeky dashes of pink peppercorn tincture topped off with Perrier-Jouet champagne. Not to toot our own horn, but we think we’ve created the cocktail of the summer! 🤤
Since we launched our menu, the Luca has easily been one of the most popular, and we get why: This gorgeous little twist on a Hugo Spritz is refreshing, crisp and perfect for long hot summer days.

💭 This or That? 💭
We sat Aaron down for a chat about two drinks off of our latest menu: the McCool and Setanta. These drinks are very different in flavour profile but are tied together by their lore.
Irish mythology has long been a source of inspiration for creatives all around the world. So it seems only fitting that we tapped into our heritage to create some banging cocktails.

🫧 Introducing… the Fade! 🫧
Named after the corridor of chaos itself: Fade Street, Dublin. If you’ve spent many a blurry night in , or , this one will surely spark a wee fire in your soul.
This wild little twist on a Pornstar Martini invokes the indulgence and glitz of going OUT-out: A scoop of passionfruit sorbet floating on a bed of vodka, Alma Finca and bubbles, it’s fun, fresh and even a little bit theatrical.
The best part? You can drink the Fade two ways: Scoop n sip, or mix the sorbet in to make a frozen passionfruit concoction.

🎶 Introducing the Punk Poet 🎶
Named after the legendary Shane MacGowan, we think he’d approve of our concoction. This take on an Old Fashioned is made with fat washed Wild Turkey 101 bourbon infused with orange zest. For added depth and indulgence, we’ve also added Mozart dark chocolate liqueur.
Smooth and delicious; the Punk Poet is a favourite among staff and regulars alike.
In the words of MacGowan: “Drinking stimulates the imagination” and upon thorough testing, we have to agree 🧠✨

Croí means love in Irish. And love is where this drink was born. This drink is an ode to the love shown to us by two of our favourite regulars since day one. They’ve been regulars and supporters from day one and only realised the Dublin connection when they told us we make the best Picante/Spicy Marg and the light bulb went off how we knew each other. And this drink is take on a spicy marg with a little Dublin twist.

Setanta was the name of the boy who went on to become “Cú Chulainn”… the Hound of Cullen. A mythological warrior hero. We love our little hound of Homeboy the Irish terrier so much we made him into a big tiki mug. Which we’ve filled with this delicious drink.

The McCool…. We did it we made scotch taste good. No one thought it could be done. We’ve done it. 😂😂😂
We’ve heard all the usual tasting notes of scotch “astringent” “challenging” “tcp” and we’ve search high and low for a scotch that fights back at these stereo types. Aberfeldy 12yr has delicious honey, creamy light spice notes that pair well with the other flavours to create a delicious high ball.
The name comes from the legend of Finn McCool who went across the Irish Sea to pick a fight with the scottish giant Benandonner. Maybe much like Irish v Scotch whisk(e)y at the moment the Irish giant didn’t exactly win or loose the fight. Let’s say he got away with it. Hopefully we get away with our opening comments about scotch.

The Ace, named after Phil Lynott of Think Lizzy because he was nick named the Ace of Base and if there is one thing this drink is it!!!!
For those who love a Martini and a Bloody Mary (Maria) this is the drink for you. A little savoury a lot delicious. Often described by guests as Caprese Salad in drink form.
