The Ou Yang coffee is produced in the Yunnan region of China using a natural process ensuring minimal water use during production resulting in an incredible cup with notes of strawberry, mango, and caramel.

Temperature: 93°
Dose/ yield: 15/250g
Brew time: 03.10 - 3.20

Step 1: Start with a 50g bloom
Step 2: Swirl
Step 3: At 0.50, pour to 150g
Step 4: At 1.20, pour to 250g
Step 5: Swirl and tap
Step 6: Pour and enjoy

This week, we say goodbye to San Fermin to make way for Hamararo—the latest seasonal rotation in our bright, filter brewing line.

We first met producer Tamiru Tadesse of Alo Coffee on a sourcing trip in January of this year. An inspiring rising figure in Ethiopia’s speciality coffee scene, Tamiru is deeply committed to community empowerment, supporting local farmers with training, seedlings, and fertiliser; a reflection of his core belief that exceptional coffee begins with well-equipped, knowledgeable producers, and a thriving community.

Hamararo is a washed coffee that showcases the bright citric acidity and delicate character that coffee from the Sidama region is renowned for.
