Help us to raise money for Refuge!
Six of us from Tonkotsu are running the Hackney Half marathon to raise money for Refuge, a charity that supports women and children affected by domestic violence. We are very mixed ability runners - one a regular marathon runner, but most of us will just be happy to finish! Raising as much as possible for Refuge will keep us all going. Some of our very generous friends in the hospitality world have donated some incredible prizes for this raffle, so for a fiver you can be in with a chance of winning Michelin-starred tapas and many other delicious prizes.

New tea drop: Hojicha 🍵
A roasted Japanese green tea with soft toasty caramel, nutty and umami notes. Low in caffeine and super smooth! Perfect alongside our rich tonkotsu bowl.🍜

Easter felt like the right time to share one of our favourites 🐣
Our ajitsuke tamago - those jammy, marinated eggs you’ll find on top of our ramen are a labour of love. Soft, squidgy yolks with a sweet, salty, umami-rich flavour.😋
Recipe below if you fancy giving it a go!
6 eggs
350ml dashi stock (or water if vegetarian)
25ml sake
160ml soy sauce
10g sugar
1 stem spring onion
5g sea salt
Add all the marinated egg ingredients (except the eggs). Heat gently until the sugar and salt have dissolved then leave to cool.
DASHI STOCK :
600ml water
5cm Dried Kombu
12g Bonito flakes
Add water and kombu in a sauce pan and bring to boil, add the bonito flakes and turn off the heat. Leave until cool then sieve. Discard kombu and bonito flakes. You will have the best dash stock!

What a joy to install 14m of juicy mural in the new Tonkotsu Cardiff.🏴The design features key ingredients from the menu and inspiration from one of Japan’s most beloved good luck charms, the Daruma doll. They symbolise resilience, renewal and never giving up, which is surely what’s needed to achieve most worthwhile things in life, but most definitely to establish such a well loved hospitality offering.
A huge shout out to Suzanne Carpenter at Patternistqs and her painting buddies and who bring so much skill to a project. ❤️
We can’t wait to welcome you in and show you this beauty when Tonkotsu Cardiff opens on 18th March.😏🍜

The nearest Tube station is Tottenham Court Road (Central and Northern lines). From there, head south on Tottenham Court Road and turn left onto Oxford Street. Walk for approximately 5 minutes until you reach Dean Street on your right. Turn right onto Dean Street and continue straight until you reach your destination.
Directions for driving/parking:
If you are driving, there are several nearby parking options including Q-Park Soho, which is a 5-minute walk away from the destination. Simply follow the A40 towards London until you reach Tottenham Court Road. Turn left onto Oxford Street and take a right onto Soho Street. Continue straight and turn left onto Greek Street before taking another left onto Bateman Street. Finally, turn left again onto Dean Street where your destination will be on your right-hand side. Please note that parking in this area can be quite expensive and availability may be limited during peak hours.
