CRISPY PRAWN HEAD BAR SNACK…

marinated in fresh turmeric, salt and black pepper, dredged in rice flour and fried until crisp. served with a pounded nahm jim sauce for dipping

the tough cap is removed, and we leave a little nugget of meat still intact — so the whole thing fries crisp and can go down the hatch

best eaten quickly while still piping hot, alongside something cold and refreshing to drink

we recently had a delivery of some very special ex-dairy goats, beautifully sourced and aged via ftjspa

different cuts went into different dishes, with some of the tender grilling cuts landing in this special curry - inspired by a beautiful dish that we recently cooked with Kru Ying somrom.space in koh samui (see latter pics/video), in that case with grilled beef.

Rich, deeply spicy from chilli and liberal levels of black pepper and layered with krueang raa (dried spices), it’s a dish left a real impression on us.

the goat specials are all done and dusted now, but look out a return of this curry, it’s a new favourite.
