ep 1: sticky yakitori skewers🍗 full recipe below
ingredients [makes 8 skewers]:
🍗 500g boneless chicken thigh
🌱 1 bunch spring onions
🍢 bamboo skewers
🧂salt & pepper
🥄 1/2 cup itsu teriyaki sauce
🥄 2 tbsp soy sauce
🥄 2 tsp sesame oil
🧄1 clove grated garlic
🫚 1/2 thumb grated ginger
method:
slice the chicken thigh and green onion into 2 inch pieces. with a bamboo skewer, pierce 3-4 pieces of chicken per stick, alternating with the green onion. repeat 8 times and season with salt & pepper.
mix the seasonings with grated garlic and ginger to make the glaze. grill on cast iron on medium-high heat for 7 minutes per side, then thoroughly brush on the sauce. alternatively, air fry for 15 minutes on 180c, then glaze and finish for another 5 minutes.

ingredients [serves 2]:
🧈 1 block firm tofu
🌾 1/3 cup cornstarch
🥄 1 sachet miso easy
🥄 3 tbsp itsu teriyaki cooking sauce
🥄 1 tbsp honey
🥄 2 tbsp mirin [optional]
🥄 1 tbsp water
🥄 2 tsp sesame oil
🫚 thumb of grater ginger
🧄 2 cloves grated garlic
🌱1 minced spring onion
🍚 serve over rice
method:
half the tofu block into steaks and lightly score the surface. place the steaks between a few sheets of kitchen paper and carefully squeeze out as much liquid as possible. rub in a tsp of sesame oil and lightly toss in some cornstarch.
pan fry in oil on med-high heat for 7 minutes per side. combine all the sauce ingredients in a separate bowl. reduce the heat to medium low then pour over the tofu steaks, letting it thicken into a glaze. dilute the sauce with water if it gets too sticky.
top with spring onion and sesame seeds, and serve over rice.

brothy veg-stuffed cabbage rolls🌈🥬 inspired by 💛 full recipe below
ingredients:
🥣 1 carton itsu brilliant broth
🥬1 large cabbage
🥕1 carrot
🫑2 peppers
🌱 bunch of spring onion
🍄🟫 2 packs enoki mushrooms [optional]
🥓 1 pack of streaky bacon [optional]
method:
peel the cabbage into 12-15 large leaves and blanch in boiling salted water for 10 seconds, then immediately dunk into an ice bath.
julienne all the veg into matchstick size. lay a strip of bacon onto each cabbage leaf with an equal pinch of veg, then roll.
place each cabbage roll into a large pot and cover with a carton of brilliant broth. simmer on medium heat for 12 minutes and enjoy.

15 min mushroom & salmon miso soup🍄🟫🥣 full recipe below
ingredients:
🥄 2 sachets of itsu miso’easy
💧300ml of water
🍣 100g filet of salmon
🥬 1 large pak choy
🍄🟫 assorted mushrooms [we used chestnut and enoki]
🌱1 stalk green onion for garnish
🥄 tsp sesame oil
layer the veg in a small saucepan and gently place the salmon on top to steam. cover the salmon in 1 packet of miso, and drizzle the second packet over the veg.
pour in the water and let it simmer for 10 minutes on medium-low heat with the lid on. gently flake the salmon with a fork, and garnish with green onion and sesame oil.

episode 3: one pot beef udon🍲🍜
ingredients [serves 2]:
🥬 leafy veg [handful of chopped cabbage or pak choy]
🍄🟫 assorted mushrooms [optional]
🧅 sliced leek or white onion
🥩 200g thinly sliced meat [optional]
🍜 2x itsu udon noodles
🥣 1 carton of itsu brilliant’broth [classic ramen flavour]
method:
wash and slice veg of choice. assemble veg in a large pot with sturdier veg and noodles underneath.
pour over a carton of brilliant’broth and simmer on medium for 10-15 minutes.
adjust broth to taste with soy sauce and a small dash of sesame oil.
